How much glycerin would you add to a finished 5 gal. batch, or is it added by personal taste? Also wouldn't you have to make sure fermentation has completely stopped before adding any sugars for fear of exploding bottles or secondary fermentation?

BEST ANSWER: I usually let my wine sit in the secondary fermenter several months. It does not hurt the wine, and it clarifies. I do not like a sweet wine, so I add about 4 oz. of glycerin to 5 gal. I have not had an explosion yet ;). It is a matter of how sweet you want the wine to be. Also, I add approximately 10 oz of conditioner, 4 TBSP oak extract, and 2 1/2 tsp potasium sorbate. This has to be stirred into the wine, so I add it to the bottling bucket siphon the wine into the bucket, let it sit to clarify (I always get sediment in it), then bottle.
