Follow the directions exactly...
...and this will turn out pretty darned great.

I'm no wine connoisseur. I only just started into this hobby six months ago with kvass and mead in Ball canning jars. I have been saying to people, "really, I don't know how this is SUPPOSED to be. My wine tasting has been few and far between, so I really don't have anything to base the quality off of or confidently decide if it's better or worse or whatever from what I've tried in the past."

So I brought a bottle to my boss who shared it with our company president. Two reviews from "veteran" alcoholics definitely helped with the morale boost here. The first was, "It was good, for Chardonnay. What can you expect from cheap wine?" while the other went so far as to give a high compliment to the quality of color and taste, while stating that "it was stronger than I expected. Got a little tipsy after just the first glass!"

That would bring me to the statement that this is a six-gallon kit, which I fermented in my primary five-gallon bucket, then racked into a six-gallon carboy. And with the instruction to "top off the secondary with store-bought if necessary," well, I couldn't bring myself to, so I skipped that bit. And so with the higher starting gravity and the longer wait to hit the kit's target, this statement that it was "pretty strong" made sense.

Other equipment reviews and Youtube comments over yeast nutrient, fining agents, and hand vs. drill degassing got me feeling a bit "purist" over patience vs. clarity. But in the end, I made the decision - "This is my first ever kit. I'm gonna follow the directions EXACTLY when it comes to added chemicals, just to give myself a baseline of how it's expected to turn out. Maybe in the future I'll try cold crashing for clearing, just to see if it is better or worse or easier or not. I can still hand-stir this to degas, and that plus the lost gallon due to my not reading directions at the beginning will be my compromise."

In the end, I think it was worthwhile.

Easy to make, and pleasing daily drink!
Easy to do, but also fun because you add the oak chips and have a little hands on, stirring daily in early fermentation. On my third kit, and I anticipate a few more this year alone. It's fruity, light oak (send me two packs of wood chips!) and about 13% alcohol on my first two. Not too dry, not too sweet, just like it says, a versatile everyday wine.
We drink this one all the time, it's flexible.
On my counter for first days while stirring daily, goes to the cellar after we add oak chips day 7.

What is all in this kit ?

BEST ANSWER: I know for sure this came with: bag of juice, packets of champagne yeast, meta, yeast nutrient, keiselsol+chitosan fining agents, a small pouch of oak chips, and the instruction manual/log sheet. It may have also come with potassium sorbate, but I don't recall for sure and I don't have the sheet nearby to check.
What is the ABV?

BEST ANSWER: That is an abbreviation for "alcohol by volume" and is expressed as a percent. With these kits, I typically get around 9%.
