I use at 2-5% of the grain bill, as a partial substitution to crystal malts. Gives added character and a unique aroma particularly in beers that are aged a bit.
I use this grain to replace crystal malts in all of my recipes. I use more or less depending on color and flavor needed. Much better flavor than highly kilned crystals.
