A unique blend of Belgian Saccharomyces and Brettanomyces. Phenolics, mild fruitiness, and complex spicy notes develop with increased fermentation temperatures. Subdued but classic Brett character. Apparent attenuation: 75-80%. Flocculation: medium. Optimum temp: 68°-85° F
