Product details

Includes a German ale strain with low ester formation and a dry, crisp finish. The Lactobacillus included produces moderate levels of acidity, and a unique Brettanomyces strain from a now defunct brewery in Berlin imparts a critical earthy characteristic that is indicative of a true Berliner Weisse. Generally requires 3-6 months of aging to fully develop flavor characteristics. Apparent attenuation: 75-77%. Flocculation: low. Optimum temp: 55°-68° F.

*NOTE:*During summer months, we include complimentary ice packs will all liquid yeast orders. However, it is difficult to guarantee that the ice packs will stay frozen given transit times and particularly hot temperatures. For this reason, we recommend ordering dry yeast during summer months.

Do not make a starter with this yeast blend. You will mess up the proportions of yeast and bacteria. According to Wyeast, there is a low amount of yeast in the blend to allow the bacteria to start acidifying the beer before alcoholic fermentation begins. Because of this low amount of yeast, this pouch is not going to swell like their other packs. I activated mine 2 days before brewing and it only swelled slightly. They also say that because of the low concentration of yeast, it can take 3-4 days for fermentation to become noticeable. Let warm to room temp, smack and pitch.

Good Customer service

Recieved yeast and yes its about 95 degrees out. I live in CO. I should now better to have yeast shipped in the dead of summer from MN. Anyhow I made a start with a 1/2 gallon no activity after no activity in wyeast packet before pitching. I gave the yeast a few days in starter and no activity really a few bubbles on surface but nothing to speak of. I called NB and they shipped me another packet of yeast. I was amazed at the customer service as always. NB no matter what will treat its customer's way better than most I have dealt with. I made the Berliner Wiesse and used the week and 1/2 old starter and new packet in a 10 gallon batch. I have one batch that almost blew the lid off after 1 day and the other batch fermenting great.I will let you know on flavors but my point here is mainly that NB will always give you good customer service. Something to be said in today's world.Thanks NB

Not bubbling fast

Got my order and the yeast pack arrived activated and warm including the ice pack. Proceeded to make brew the same day. 3 days later the fermentation is very slow, around 1 bpm. I will probably add another yeast tommorow to get the brew going.
