Love this stuff
Makes great wine for those of us who have a sweet tooth.
I generally start a batch in September and bottle it in small 350 ml bottles. They make fantastic Christmas gifts.

Just not for me
The kit was easy enough to put together but at the time of bottling there seems to be some coffee and tobacco flavors that I don't much care for. Maybe this wine will get better after aging and all the flavors have time to mellow and mingle, if it does I will update this review. If you do buy this kit, use both packets of yeast and allow at least two months for clarifying, it is a thick and potent wine. The kit yields 3 gallons

Can I make this into Tawny by maturing longer before adding sulphite and finings?

BEST ANSWER: Over time in storage without sulphite, you could start seeing some light oxidation and increased sherry notes. You could just fortify it with sherry to taste instead. It is a risky endeavor as when oxidation does set it, it could get out of hand.
Can you control sweetness of the wine ?

BEST ANSWER: Yes, you can. A person might add only half of the "sweetening" packet ( "Finishing Blend" ) added late in the process, or add it "to taste". Add some, stir it in, and taste it. Add more if desired. - Mike W, Northern Brewer
