Agreed with others that a blowoff tube is a must, this stuff was pushing out the tube for several days. I will use this again for my wheats as it is easy, cheap, and it works.Was this review helpful? Yes (0) No (0) Flag as Inappropriate Blow off tubing is a MUST!This yeast is VERY active, I pitched it straight into my bavarian wheat at around 74-75 degrees and in maybe an hour it was already starting to form tiny little patches of bubbles on the surface of the beer. Then thanks to an annoying mockingbird I woke up early in the morning and saw that the beer was starting to foam out of the carboy (thanks for waking me up mockingbird!). Yes (1) No (0) Flag as Inappropriate more of an american wheatRegardless of the origin, this is one of my favorite wheat beer yeasts and it produces a beer that is more of an american wheat than a German wheat. The banana and clove are a little more dialed down, which if you know that going in can be a good thing. I thought a schnell weizen could be turned around from pot to pour in short order. Kegged after 9 days and although I would tolerate some flaws with this approach, I am not getting any in this beer! Great Banana and Clove nose with a slight lemon finish. Really nice. Got a little more attenuation than I was expecting but at 79%, I'm not complaining. Can't really do any lagering where I live now so ales it is. I read that K-97 was good for this type of thing but I can't find that anywhere to buy where it's not in an expensive bulk pack. Other than that I may just try Safale 04 or US-05 but read that this WB-06 yeast may impart some of the esters and banana notes usually found in an Oktoberfest despite being a yeast for wheat beers. Any advice for a newbie like me?
