Tallgrass originally brewed Halcyon as their first summer seasonal, but since all the Halcyon fans (a.k.a: kiteheads) asked so nicely, they now brew this magical brew year round. Halcyon starts with raw Kansas wheat in the grain bill to give it a nice edge, but what really makes it shine is the hops - Tallgrass uses “hop-bursting” late in the brewing process to give Halcyon its palate of tropical fruit flavors & aromas with a bright and refreshing taste like the best days of summer.
Since 2007, Tallgrass Brewing Co. has been crafting award-winning ales at the edge of the Flint Hills in Manhattan, Kansas. A note on yeast: Tallgrass uses White Labs WLP007 Dry English Ale; with Tallgrass' blessing, we suggest Wyeast 1098 as the default option so customers (especially mail order customers) can more easily evaluate viability before brewing.
We strongly recommend ordering dry yeast in the summer months. We do include complimentary ice packs with all liquid yeasts, but it is difficult to guarantee that the ice packs will survive the trip given transit times and particularly hot temperatures.

Great kit that comes out amazing. Clean wheat flavor with no maltiness and a subtle hop profile that has spice and melon. Great for summer!April 25, 2016
- Browse 1 question Browse 1 question and 1 answerCould a wheat beer like this distort a refractometer reading when checking FG?BEST ANSWER: The style of beer shouldn't affect the readings. If you're getting strange readings it could be because you're using a refractometer instead of a hydrometer. Refractometers are meant for samples of sugar water, juice, etc. Alcohol will throw the reading off so the refractometer isn't ideal for FG readings. I use a wine thief and a hydrometer to check my FG.
