Woops - I just saw this was wheat that I wrote about. I thought it was the pilsner malt. I don't use wheat for my helles, obviously.
My other comment stands the same. Malted wheat should not need a protein rest.

Worked well in kolsch
Added 1/2 lb to a traditional kolsch. It added smooth mouth feel and body to the beer.

Nice to have the access to premium grains from around the world. Building terroir into homebrew is another great aspect of this hobby.

Is this less modified than the weyermann German wheat? Does that mean I need to do a protein rest?

BEST ANSWER: HI there. I used this as 100% of my grist in a helles recently. It is well modified. I did not do a protein rest, and got great attenuation and foam stability.
Wheat comes in 2 varieties of wheat - flakes and malted. Flaked is much less modified, and more proteinaceous. When I use malted wheat I don't do a protein rest, but I know some people feel they must with flaked wheat.

Just wondering if I read correctly that this malt can make 100% of the grist? I do incorporate rice hulls when working with malts high in beta Glucan.

BEST ANSWER: Yes. Can use at 100%, but as you seem to be aware, this will increase chance of stuck sparge. Could add protein rest.
