My Go-to Belgian Strain(s)
This is definitely my favorite Belgian yeast to use for all of my Belgian-style beers. The parentage of these strains are Chimay, Westmalle, and Ochouffe, which gives the resulting beer a wonderful sense of layered complexity. I recommend purposely under-pitching to bring out the esters in the final product. One vial of 575 is what I use for my 7-7.5% Dubbels, and it is by far my most popular beer that I make. Enjoy.
