Wy #3638 Bavarian Wheat Yeast
Made a really tasty wheat ale. I fermented in the upper temps recommended for this yeast, green-apple esters really show! Fruity but not tart, dry & crisp, an excellent Summertime thirst quencher of a wheat (80% pale wheat & 20% 6-row. Did NOT... get the banana or clove. Airlock began popping in about 10 hours, stopped in 2 1/2 days. Flocculation was higher than I anticipated! Definitely a keeper!

Great Strain
Wyeast SmackPacks are definitely the way if your not going to culture a strain. This strain is a "top cropping" yeast and it rafted pretty severely for my, but settled out in a day or two. I definitely get the banana taste, but not to overwhelming.

Excellent hefewiezen strain
This strain is great for producing classic Bavarian style hefeweizens. I've used it twice so far with excellent results. Fermented in the low 70s. Lots of banana and clove flavors!
