Others have said this is a finicky yeast and I would also like to reiterate the same. I'm fermenting a Belgian dark strong ale and everything looked like it was going well in the first week. I thought it was a bit of a slow fermenter, but then it just seemed to keep the same moderate pace for a while. Then it just slowed to a crawl where it now sits. I checked the gravity thinking it was done with primary fermentation expecting something around 1.02 or lower. No, it's 1.040! Yikes! So I aerated it with an aquarium pump and aeration stone for a few minutes and added a tsp of Fermax. That was yesterday and nothing seems to have changed. It's still bubbling only about once every 25 seconds or so. If it's still this slow in the next 24 hours or so, I think I'll have to go get some other yeast to finish the job. The flavor descriptions of this yeast made me think it was perfect for what I want, but I can't wait a month or two for primary fermentation to finish.

Great Mead yeast
Used for a quick mead yeast (BOMM style). Delivery was great, yeast was still active after shipping during summer heat. Good packaging.

It's Yeast
I brewed strong Belgian ale for my brother-in-law's wedding. This is the yeast I used. I had a potential 10% abu, this was able to get me to about 8%. That's a strong beer.

A finicky Belgian yeast
I make a lot of Belgian beers, this yeast is the most difficult to get to work right. Every time I have used it, it has not felt like attenuating out the beer. It starts quickly, krausens, and then settles out quickly. Quickly as in 3 days and you'll think its done. However I found that pitching cold, free rise, and then holding the temperature way up there in the 80+ range works the best, as does a longer primary fermentation on the yeast cake. Leave it be for a month and you'll be rewarded.

Not what I expected
Expecting 100 billion cells per pack. Getting an older pack with an est if 60 % viability is not what I expected. Will not order yeast from here again.

Liquid yeast packets are rated to make awesome beer below OG 1.060 if used within 6 months of manufacture. We send them with no less than half their shelf life.

Yeast has great attenuation sbd just enough character. Ideal yeast for golden strong ales.

Belgian Strong
I used this yeast only once on a strong ale. This yeast really takes off using a yeast starter and the finished product was great. I would recommend this yeast for any strong Belgian Ale.

Great flavors for mead!
This yeast was brought to my attention by reviewer LoveofRose and it is every bit as good as he says. Also a review for Northern Brewer packaging! My 1388 arrived safe and sound thanks to NB using a cold pack to stave off the Miami heat. Makes great mead in a month!

Be nice to it and it will be nice to you...
Love the devilish side to this yeast and use it for all my Belgian Strong Goldens. In my experience it works fast but finishes very dusty and with a high terminal gravity that takes a very llloooonnnggg time to sort out in Secondary. However, I've finally bit the bullet and purchased a stir plate and run pure O2 into primary prior to pitching (where I used to make a starter and shake the primary to oxygenate). The increased yeast volume and dissolved O2 have made all the difference. Reduced primary to 10 days with a drop down to 1.008.
