My personal favorite yeast strain
I have tried other yeast strains when brewing Biere de Garde, but I can't get the right flavor. I like something in between Jenlain and Castelain. This strain nails it. Please Wyeast, bring back the 3725!!!!!This strain, obviously works well with malty brews, but I have found it does a splendid job on hoppy brews too. IPA styled BdG, or a tremendously hopped up english ESB brewed with this strain. Some of the greatest things that have ever come out of my kitchen.

A must have in the home yeasts inventory!
This is an amazing yeast! Exactly as described by N.B.! Allot more attenuative than I was expecting! The grain flavors come through with a brilliant balance with the hops. I fermented between 76*F and 80*F! Like a Farmhouse strain there is a very pleasant earthy/corn cereal 'funk' that is delicious! It complements any grain I threw at it! I made a Session using Franco-Belgian Pils & Franco-Belgian Munich malts 50/50 with some moderate dose of noble hops... Fantastic! I also made a Roggenbier from the kit by N.B., again Absolutely Fabulous! With the rye the earthy flavor comes out more but you wont have that beer any other way! It's there in the session but as a hint. Now I can brew all year long! I can't wait to pull a true Bier-de-Garde by letting it rest for a month or two+ Worth every penny!

so far so good
I brewed with this for the first time a couple of weeks ago. I used it in a partial mash recipe that I just threw together. It started fermenting in 5 hours! This beer is in the secondary now and smells great. I am giving it a 4 for now but may go to five depending on how this beer turns out.

Favorite Seasonal Yeast
This yeast is amazing!!!! I have used this yeast on two occasions. The first time my attenuation was at 92%. The second time was 84%. I think this is very good considering it only rated between 74-79%. All that aside, the flavors it contributes are what make this yeast one of my favorites. It truly does provide a malty palate and finishes on the dry side. It has delicate spiciness that blends enhances it too.I wish this yeast was available all year long. It is a very robust, flavorful yeast that will produce excellent Belgian Ales!

Love this yeast!!!!
I ordered this last year along with the Bier De Garde extract kit with specialty grains. This is waaaaay better than using a lager yeast as I have tried that as well. It took a few months (3-4) in the bottle to really start to develop it's flavor profile. This is definitely one of my favorite brews. It tastes nearly identical to New Belgium's Trippel.
