Smack Pack - Not a fan
Iâ??m not a fan of Smack Packs. Whereâ??s that packet? Did it break? Too much uncertainty for me. When all goes well itâ??s great but when that packet doesnâ??t break itâ??s a whole â??nuther story.

my first kolsch
very active fermentation at 60 degrees first two weeks, finished the last two weeks in secondary at 40 degrees, very clear.

Fantastic kolsch yeast
My favorite yeast. Makes a very authentic kolsch - takes awhile to drop clear, but it's worth the wait.

Turned out great
This one blew up in my bucket, with a thick krausen that must have been a good eight inches high, straight out the airlock. Tons of activity for a week — mine was in the mid-to-low 60s for much of that.

I can see why this beer is traditionally given a secondary cold aging. Mine stayed in primary for three weeks before bottling, and the first few weeks in bottle it poured somewhat hazy/cloudy. After that it gradually settled until it became very clear.

Fortunately, I loved the flavors both before and after it cleared. In the "hazy" stage it tended to have luscious, almost fruity flavors that everyone loved. As it cleared it became increasingly clean-tasting and (what I think of as) kolsch-like. Wonderful taste all around.

I will be sure to always use this yeast when making kolsch.

A preferred yeast for winter fermentations
This bad boy is really a killer piece of hardware that can last a lifetime. Due to time restraints I'm primarily an extract brewer and this 8 gallon pot makes for the ideal vessel for full volume extract boils with specialty grains (up to 6 to 6.5 gallons) with ample head space remaining. Quality of my beer has been great coming out of this guy and the internal gradations help when the boil ends to ensure I'm around the 5 gallon mark, plus the silicon wrapped handles make for quick and painless boil-over saves. Just the perfect brewers kettle! A must have in my book!

A preferred yeast for winter fermentations
November through February when my cellar and garage temperatures are cool I like to make pale ales for drinking spring through summer using this yeast. This yeast always forms a large and extremely persistent KrŠusen when I use it, even at the lowest end of it's temperature range. In secondary the beer may take a while to clear. I will lager the secondary if ambient temperatures permit, then finish by conditioning in the Keg at about 56F for a month. I highly recommend it for this type of psuedo-lager fermentation schedule.

Great product
I've used this yeast about half a dozen times now. It has worked great for my kolsch recipe, but I have used it for other styles just because the low ferm temps are really convenient for me. This yeast has been a beast every time I've used it...gets started pretty quick and finishes pretty quick as well...I usually ferment in the low 50's for the first two weeks....this stuff can work well at 50 degrees. Flocculation results have been above and beyond on every use.
