My favorite yeast for English Standard/Ordinary Bitter recipes.

OG 1.054 FG 1.006. Did a 2 stage fermentation. Coming out of primary yeast looked very much like chunky cottage cheese. Worked add expected and made a great beer. I washed some yeast and will keep for another batch.

Used in a fireman's 4 clone.

Made My Best Beer!
I brewed a 5 Gallon ESB and fermented with this yeast with no starter. Dropped my OG 1.062 to FG 1.019. Tasted amazing! Wonderful malt flavors, and bright, clear beer. I just pitched a new pack after a 3 step starter to chew through 6 gallons of OG 1.090. fermenting at 64*F. High hopes for this Awesome strain!

Highly Flocculant, did well without starter
Fermented my Redhook ESB clone from 1066 to 1016 with no starter, very flocculant and finished beer is crystal clear. Vigorous fermentation

My favorite yeast.
This yeast can produce clear beer with a fantastic nose, especially fragrant when served at cellar temperatures. I prefer it for moderately bitter amber beers, especially English styles. This yeast produces excellent fermentation for me, provided that I make a starter and pitch plenty of yeast. It floculates quickly and I have had poor results when I don't pitch enough "amped up" yeast fresh from a starter. I also find that it works - slowly - in the trub after floculating so I like to let it stay in primary at least two weeks, preferably four. Don't be alarmed if you don't get much Krausen with this yeast, and I have never had blow off with it, myself.

Very Good Yeast
This is the best English ale yeast. It's very reliable and clears brilliantly. I used it in my brewery. It works well with everything. It's the English equivalent of anything from Wienstephan which is also the best quality yeast.

Good "standard" english style yeast
I have started to move away from wet yeasts due to shelf-life, ease of use and shipping issues. I find safale 04 and 05 adequate for most American and English style ales...That being said, there are some styles that just need a liquid yeast to be perfect. So when something calls for an ESB yeast, there is nothing like 1968.

Pairs well with simcoe and cascade hops.
Excellent quality as with all wyeast products. Its fruity notes pair very well with simcoe and cascade to produce a distinct, clear, grapefruit flavored American (Colorado?) IPA.
