Yes (0) No (0) Flag as Inappropriate Brilliant English Strain!The performance and flavor of this strain is top notch. Diacetyl production is very low, makes for a very clean beer even when racking to cask. Esters can be prominent if foregoing aging time, but 7 days on pales and 14 days on darker beers does the trick. As for performance, with a proper pitch and temperature control this rockets through fermentation. It can be done in 48 hours if it is freshly harvested. Very nice krausen for top-cropping. If not mixed well after pitching the yeast may need a rousing during lag-phase but that is pretty standard. If bottle conditioning a beer, this yeast drops nice and bright after a week of warm conditioning and forms a very dense cake on the bottom. Yes (0) No (0) Flag as Inappropriate Perfect for ESBI recently brewed a partial-mash ESB, using this yeast for the first time. Did 1 week primary, 1 week secondary with E Kent Goldings dry hop (~72 ¡F for both; OG: 1.053, FG: 1.010). Despite a huge krausen in the primary fermentor that never settled, the beer clarified very well in secondary. Carbonation/bottle conditioning only took about 1 week, and the finished product looks and tastes great! This yeast provides that classic English taste and mouthfeel that I was going for (the mouthfeel in particular is really impressive, almost spot on for replicating a cask-conditioned ale). Very nice and subtle cherry notes, working really well with the English hop profile.Overall, highly recommended!Was this review helpful? Six days + 1 hour after cold crashing and a slam n bang carbonation it turned out great. Malty, lightly fruity, and delicious.
