A rapid starting and constant fermenting semi-dry white wine yeast that will enhance fruit flavors and add fruity esters, ideal for fermenting with neutral grapes or concentrates. Limits phenol extraction and may neutralize up to 40% of malic acid producing a smooth and rounded "nouveau" wines that will mature quickly. A low foaming strain. Whites, roses, nouveaus and concentrates. Also known as the "Narbonne" strain. 59-89° F (15-° 30C) Alcohol Tolerance: 14%.

Great Mead Yeast
For a few batches, I went with Wyeast 4184 because I wouldn't have to add any preservatives or anything else. The knock with that yeast is that it takes a long time to finish, even with yeast nutrient additions. This 71b yeast is cheap, gets the job done and ferments completely, leaving you with a product that you can back sweeten after adding stabilizing agents (K meta and K sorbate). Recommended, but be sure to read up on the stabilizing process (and the chemicals required) beforehand to see if it would work for you.

Used it for an orange blossom mead, seems to be fermenting away won't know the real results for a while still...

My go to yeast
Love this yeast. It's my go to yeast. Makes excellent wines. Used for whites, reds, fruits, ciders and mead. All with starting gravities from 1.080 - 1.120

Good and Cheap
I've used this yeast for a couple fruit meads now, and it always works quickly and efficiently. My most recent batch (15LB honey, 11lb rhubarb, nutrients & energizer) is fermenting so vigorously I had to switch to a blowoff tube! This yeast finishes very dry but you can then stabilize and back-sweeten if you desire. I also like Wyeast 4184, but the first time I used that for fruit mead it stalled and I'm still having issues with it! I'm still a mead novice, but if you don't mind buying extra stabilizing supplies this Lalvin 71b is a good yeast for any type of mead you desire.

Hooray for 71B
I love this yeast for fruit wine and mead. It leaves lots of residual fruity esters, and it's fast! Within hours of pitching a simple sugar water starter my fermenters are happily bubbling away, even with starting gravities well over 1.1.

Valuable for cidermakers
71B is a reliable yeast for cidermakers, with two important characteristics:- It can reduce acidity (consume malic acid) substantially, which is a real help if you're working with a lot of sharp apples--common in the US.- It almost never produces H2S (rotten-egg), even with low-nutrient fermentations. It's one of the most dependable yeasts for cider in this respect.

Used with Cider
I used this yeast with a batch of cider, which was actually my first attempt at brewing. I wanted to start out with a dry yeast and was quite happy with the 71B-1122. The batch turned out well. I might experiment with some wyeast in the future, but I'll definitely be using this again at some point.

Body of Flavor
It provides a good body of flavor when used only with the grape juice or when adding additional flavores.
