Details

The Nottingham strain was selected for its highly flocculent (precipitating) and relatively full attenuation (transforming sugar into alcohol) properties. It produces low concentrations of fruity and estery aromas and has been described as neutral for an ale yeast, allowing the full natural flavor of malt to develop. Good tolerance to low fermentation temperatures, 14°C (57°F), allow this strain to brew lager-style beer. Optimum temp: 57°-70° F. An innovative new vacuum packaging method allows the brewer to ensure that the package is fully sealed prior to use.

This is a good yeast, when you ferment it at the appropriate temperature. I use it regularly in my robust porter recipe, and this last time around got lazy and let it ferment over 69F. When you that happens, you get really bad fruity off tastes. It has made my porter virtually undrinkable, but I am forcing myself to drink it so that with every sip I am reminded to ferment right!

First time using dry yeast... Being from San Diego I am a big supporter of white labs, but I figured I'd give this yeast a try. I rehydrated an pitched and within 2 hours I have crazy bubbling out of the blowoff. My go to yeast for a beer I want to finish quick. It's almost as quick as the San Diego super yeast. I have used this yeast in several of my different brews. I had just put in the wort straight from the pouch and I have used it starters and the results are very close. But they never fail. The yeast is a good producer, never had an off flavor with this yeast like some other brands.

I am very happy with this yeast. Fermentation start very quickly. I made a big beer, and it went through primary fermentation in about 4 days. Very flocuent. Yeast settled out and formed a thick cake. The beer easily racked to the secondary. (Posted on 9/20/13)

So far I've only brewed two batches of beer, and I used the Danstar Nottingham Ale Yeast for both, so I'm not sure if something else works better. I liked the taste of both batches and the yeast seemed to produce a healthy fermentation, and it's a good price on here, so I like, but I'm still experimenting with the best combinations out there. I recently brewed a Dunkleweise and the yeast got so active that we had to use the blow-over tube.
Totally cool to see happy yeast in action.
I also recently used this to 're-carbonate' a batch that didn't carbonate like it should have.

Seems like everyone is in agreement. I have been using Nottingham dry yeast since 1995 and it has never ever let me down. Hundreds of brews over 17 years is a dam good track record. Went to the brewshop and saw the same thing, from 1.50 to 4.50 a packet. For the first time I was forced to think about reusing the stuff, was cheap enough before to just buy a new one. So I took a clean spoon and grabbed a fresh dollup from the old keg into the new beer and good lord! It took off like a rocket within 3 hours and looks and smells fantastic (a big stout). Almost ready to keg and I hope Danstar is listening..........they have forced me as a consumer to reuse which means I will be buying less of thier more expensive product. Mebbe buy a fresh pack every once in a while to restart the genetics and acid wash the intermediate populations to ensure it stays viable. (Posted on 2/24/12)

I have been reusing this yeast for 10ish batches now and it is still hanging in there and producing great beer. The best parts are it is quick to ferment (start and finish), imparts a very neutral taste, and it clears out much nicer than 04 & 05. While the price increase is really unwanted and unwarranted (blame the distributor not Northern here) I will still be using this for most of my ales as it can be reused and reused with out any problems. I like this yeast a lot but it is now time to switch as the price went from $1.60 to $4.50. The new price makes the liquid yeasts that I can buy local look more attractive to me. There are also many dry yeast alternatives to this one. Too bad as I did like it. (Posted on 11/9/11)

Used this yeast for years and won many awards. It is clean, and has never failed. I had the same results with the Saf05 and 04 but used Nottingham because at $1.40 a pack, I never worried about reusing. Going back to the 04 and 05. This has been my go to yeast for over 4 years. It was clean, it worked, and I never reused yeast because the price was right. It is better then the 04 and 05 because they both have better qualities depending on the type of beer. I will say with the price increase, I will go back to the 04 and 05 as my go to yeasts. This is my go-to yeast. I've had airlock activity within 3 hours of pitching rehydrated yeast with completion of primary fermentation in 36 hours at 64 degrees. Only downside is high attenuation (sometimes l think this stuff will ferment rocks and sticks if you let it). If I want higher F.G, I'll add some dextrin malt or increase my mash temp to 156 or so. If you don't use a secondary fermentor than you will appreciate this yeasts flocculation properties because the sediment (which can be substantial) sticks well to the bottom of the bottle when pouring. i've used this yeast in my first 3 brews 2 because it was the recomended yeast and the 3rd because my smack pack failed on a batch of caribou slobber its temp range is ideal for my location it starts early and strong and finishes within 10 to 14 days it is very dependable and widely applicable/affordable i'm having trouble convcincing myself to try other strains i recomend keepnig a couple of these packs in stock just in case (Posted on 4/6/11)

I rehydrated it and pitched it and within a couple of hours I could see activity. By 12 hours, the beer was vigorously churning and fermenting. Just did a 10 gl all Munich IPA, one carboy s-04 the other with Nottingham. Everyone agreed the Nottingham was better. Flavors were more complex with better finish. The other one still came out great but I am using this one a lot more now. (Posted on 10/23/10)

You cant go wrong using this as an all around dry yeast for new brewers or keeping a recipe easy. It's go a celan character, aggresive attenuation results in max ABV, finished quick, and compacts/flocs well.
