LalBrew® Nottingham English Ale Dry Yeast (Danstar) strain was selected for its highly flocculent (precipitating) and relatively full attenuation (transforming sugar into alcohol) properties. It produces low concentrations of fruity and estery aromas and has been described as neutral for an ale yeast, allowing the full natural flavor of malt to develop. Good tolerance to low fermentation temperatures, 14°C (57°F), allow this strain to brew lager-style beer. Optimum temp: 57°-70° F. An innovative new vacuum packaging method allows the brewer to ensure that the package is fully sealed prior to use.

Oooo-wee that is one active yeast. I used 2 packs for a 1.095 G Barleywine and it took off in the wee hours of the am, about 8 hours after pitching and heading toward the kitchen for breakfast I could smell bread and thought Uh-Oh I may have a situation. Lo and behold the lid blew off even with a blow off tube and was percolating all over the kitchen floor, Thankfully I only lost about two bottles worth of beer but damn thats two I dont get to drink. Maybe its a sign, who knows. In only 5 days gravity was down to 1.020 and should finish out in about a week or two more. Cant wait to be drinking this one.
