AKA UCD #595. An all purpose and vigorous, moderately foaming and sulfite tolerant strain useful in producing white wines. This strain leaves behind a pleasant yeasty flavor. This strain is not used in producing sparkling wines. Whites. Temperature range: 59-86 F. Alcohol Tolerance: 13-15%.

This yeast is essentially fool-proof. I am fairly new to brewing and this was the first yeast recommended to me by Northern Brewer for my cider. I'm on batch three, and getting ready to start a batch of apple Graf. Ferments easy and quickly and leaves a dry cider that is neutral for back-sweetening. (Posted on 11/2/13)

I used this yeast in a few batches of ginger beer and tart cherry soda and didn't have any off flavors at all. Perfectly neutral, and fast fermentation (soda ready/well-carbonated in 12-24 hours). (Posted on 6/6/13)

I have used this to make red, rose, white and fruit wines, flat and sparkling and even cider. Listed alc tolerance 15%? I got 16% out of an apple wine! Ferments sugars very completely and finishes dry at almost any OG. Very neutral finish that hasn't over-powered even the lightest flavors. While it states that it is 'not used in producing sparkling wines', i have done so successfully. Very versatile and reliable! My go to fruit yeast for years. (Posted on 6/6/13)

Tried this in a grape soda and fermented at around 70-75 degress and got the worst yeasty rotten egg flavor coming through. I tried it based on many saying it was a very neutral yeast, never again! Maybe I should have tried the Cuvee instead . . .
