Great German style hefe yeast.
Probably my most favorite German style wheat yeast. Always performs well and ferments quickly. I make a starter which kicks off fermentation quickly as well. I keep the temperature down to avoid too many phenols and the yeast ferments well even down to 62-64 degrees. Gives off nice clove & spicy flavors. Not much banana at these temperatures so you may want to ferment at a slightly higher temp if you want that character. I highly recommend this yeast.

Banana!
I've brewed 5 hefes and 3 or 4 Dunkelweizens with this strain, great sweet banana flavors and aroma, and a nice creamy texture to the maltiness. Less clove, but sweeter than WLP351. My most balanced batch, was using a vial of both yeast strains, it gave a very rich and a great balance between banana and clove, enjoy!

I brewed it to compare with WB-06.WLP300 has better flavor balance between clove & banana.I love it!!

Keep coming back to this one
I tried other strains but keep coming back to this one. I ferment between 62 and 65 degrees for the characteristics that are most pleasing to me in a Hefeweizen. I had bad luck with the smack pack brand but White Labs have always given me fast and vigorous starts.

Perfect classice Hefe yeast
If you are looking for a hefe yeast that imparts the strong banana esters and fruitiness, this is your yeast. We used several yeasts before this one, including another liquid yeast from another brand, but none of them brought forth the characteristic we were looking for. We received high remarks on classic nose and flavor in a recent competition... unfortunately the beer was flat, working on our bottling techniques.

Very quick fermentation
Used this yeast for a Weizenbock which was 1.074 OG. I made a starter with one tube and added another when pitching. Even my starter took off within a few hours and I thought it would blow out the top of a 2 liter starter. I pretty much got the same result in my finished wort. Within a few hours fermentation started and I had to add a blow off tube into a growler & that overflowed as well. Within a week the gravity went down to 1.019. Almost finished now & a sample tasted great with spice and not much banana but I held the temperatures down. The beer is not finished yet but it will be great.

Great & easy
I used this yeast on a Weizenbier and was simple to use. The finished product tastes great. Keep refrigerated until several hours before use.

Good Banana
Too many of these Hefeweizen strains seem to be heavy on the clove side. This strain produced an excellent banana character at fermentation temps around 70 degrees. Better than all the other liquid strains available in my opinion.
