AKA Geisenheim Epernay. A low foaming slower speed fermenter with low alcohol tolerance. This strain emphasizes fruit character in both reds and whites making it an excellent choice for fruit wines, especially apple. If fermented at cooler temperatures it will not ferment to dryness producing a sweeter wine with some residual sugar. For the production of Chardonnay use in conjunction with yeast nutrient. Sweet whites, fruit wines. Temperature range: 64-86 F. Alcohol Tolerance: 12-14%.

Excellent for Cider
I used this in 2 batches of apple cider, one with and one without added sugar. At 6 weeks, the cider is already very drinkable even though this would be considered a very green hard cider. The residual sugar comes through even in the batch with no added sugar. I will probably use this yeast again.

Favorite Yeast
This is my primary yeast for fruit wines, ciders, and mead. I have found that it leaves the slightest (0.005-0.002) sugars that is very pleasant. Also gives the nose a bit more floral character. It is also forgiving in the sense that even when it ferments dry it isn't as hot in character as champagne.

Great yeast for ciders!!!!
Works awesome for ciders and apple wine.Primary three weeks @60F ambient, cold crash to 35F, rack to secondary with gelatin for 1 week.Boom! Best cider I make over and over, crystal clear in just 4 weeks!!!

nice yeast
I have been using this yeast for about 3-4 years now. Love the results--fruity! I like to make ice wine and german type wines. I use this yeast during our winter,fall and spring months, when it is cool-cold in our garage.(northern SD winters). I like how it leaves some sugar behind in the wine. Nice yeast.

how many gallons of cider per packet of this yeast?

BEST ANSWER: 5 or 6 gallons should be no problem, especially for the much lower OG of cider vs wine. Expect it to take cider all the way to bone dry unless you keep it permanently below the optimal temp range or kill the yeast off.
