more of an american wheat
Regardless of the origin, this is one of my favorite wheat beer yeasts and it produces a beer that is more of an american wheat than a German wheat. The banana and clove are a little more dialed down, which if you know that going in can be a good thing. I like a good hefe but I also like this yeast a lot, an easy drinker for sure.

Pleasantly surprised
I needed to replenish the brewing pipeline after a brief hiatus. I thought a schnell weizen could be turned around from pot to pour in short order. Kegged after 9 days and although I would tolerate some flaws with this approach, I am not getting any in this beer! Very pleased with the results given the all-extract, dry yeast, shortcut process on this one.

Great Aroma!
Just used this yeast on my American Wheat and works like a charm if you want the Bavarian Wheat ester character in an ale. Great Banana and Clove nose with a slight lemon finish. Really nice. Got a little more attenuation than I was expecting but at 79%, I'm not complaining. Still plenty of malt backbone.

Using WB-06 was the final tweak that I was looking for in a Belgian White Ale. Great nose, and a tangy hint that didn't happen with other yeasts. Love this stuff!

the best wheat yeast
if you're making a wheat - hefe - wit - this is the yeast to use. Really accentuates the wheat flavor. Keep it towards the higher end of recommended temp range. Did that with my strawberry wheat I just brewed. Delish!

Would this yeast be a suitable dry yeast for an ale version of Oktoberfest? Can't really do any lagering where I live now so ales it is. I read that K-97 was good for this type of thing but I can't find that anywhere to buy where it's not in an expensive bulk pack. Other than that I may just try Safale 04 or US-05 but read that this WB-06 yeast may impart some of the esters and banana notes usually found in an Oktoberfest despite being a yeast for wheat beers. Any advice for a newbie like me?

however US-05


or Nottingham would be better options with a more neutral yeast character
