Very easy to make and produces a great beer provided you give it enough time to bottle condition. For those using this kit as their first brew, RESIST all temptation to consume after 1 week in the bottle. This was my first and I tried a bottle after 1 week and was disappointed. By week 2 it had totally transformed into a great tasting beer rivaling our local Microbrew Hef! (Posted on 2/12/15)

super easy to make and smells amazing. should've boiled off a bit of volume though, as it was over a gallon after the boil. couldn't pour it all in, so I think that affected my original gravity (1.036). the yeast may not have enough to munch on. I read on the 5 gallon extract instruction guide that this should be closer to 1.049 (the 1 gallon kit instructions don't give a OG). Will have to watch it to see what happens. (Posted on 6/11/14)

I've made both one and give gallon batches and can say this is the easiest and tastiest beer I've brewed. I spent time near Munich and had my share of biers. This one is extremely close to the Weiss bier served in many local brauhaus. I highly recommend this kit. (Posted on 5/11/14)

I spent some time in Germany back in the late '90s. Since then, I have been looking for a good Hefeweizen with no success. This is as close as I've come over the years. This is light and refreshing. I noticed one reviewer mentioned adding honey, and I'm sure I will try that with my next batch of this. I think some orange zest would also work well. (Posted on 4/28/14)

I spent some time in Bavaria the last several years, and, like another reviewer here, fell in love with the local beers. I found only one US-brewed hefeweizen that even came close, and import beers can be hard to find, expensive and not very fresh. The initial fermentation requires a blow-off, but so far every batch of NB beer I've tried has done the same thing. Nothing wrong with enthusiastic yeast, just be prepared. At two weeks post bottling, I have to say that it's an authentic and pleasing taste. Now the trick is leaving the rest alone to age. (Posted on 11/11/13)

So this was my first beer I brewed. The airlock blew off and i didn't catch it till a day later. When I finally got a taste of it, the taste was just ok. It might be due to the airlock blowing off and allowing air in, but I have had a lot of hefes and this was down on that list. I have a new one fermenting and will update later but for me, this was just ok. I brewed the American wheat and will say that tastes way better than this beer in terms of wheat beers! This is by far the best Hefeweizen I've had. But beware, the yeast in this kit are very active. My primary overflowed within a couple days. As a side effect, it smelled like delicious beer! This beer pours with a 4inch head and cloudy, as it should be. (Posted on 10/25/13)

I brewed this one as I wanted to relive the time that I spent in Germany drink the most delicious beers. I fell in love with Hefeweizen's and have yet to find one commercially made in the USA or anywhere not Germany that holds up to the ones I drank so many years ago. This beer has all the right flavor profiles and the color is spot on. The only bad thing I can say about it is that I don't have enough. I brewed a double batch of the 1 Gallon kit and with a weeks of it being ready to drink I am down to only a few left. (Posted on 10/17/13)

Not bad at all if you stick to the script, but I added some honey to it and it came out pretty well. Were I brewing five gallons of this, I would spring for the Wyeast 3638 or Wyeast 3068, though. I like Hefeweizen to have full banana, vanilla and clove esters and those yeast strains will produce that. (Posted on 9/1/13)

I do quite a few 1 gallon brews, and have tried most of the styles listed here. This kit is one of the better 1 gallon kits here on NB. It was tasty, fermented well, carbonated well.
