AKA Prise de Mousse. Saccharomyces bayanus. A low foaming, vigorous and fast fermenter good for both reds and whites. It is also ideal for ciders and sparkling wines. A very competitive yeast that will inhibit wild yeasts. It will restart stuck fermentations because of good alcohol and sulfite tolerance. This is a very neutral yeast that will have very little effect on the varietal character of the grape. A popular strain that ferments fully and flocculates well producing compact lees. Good for cool fermentations. Champagne, dry reds, whites, ciders and sparkling. 45-95° F (7-35° C) alcohol tolerance 18%

I restarted my brewing hobby after a number of years and as the result of an overabundance of Pumpkins in my Garden. I looked yeast that could deal with a lot of Pulp, and this one was most reccomended. This yeast digested that Pulp and poduced a Good Wine! (Posted on 6/1/13)

Ordered this to help a stuck cider fermentation, and that it did. Fermented fast, almost blew the top of my fermentor, and is flocculating wonderfully. My only complaint, and this isn't really a lack on the company or yeasts part but mine, and I want others to know, is that is gives a strong "winey" taste; it is not as neutral as I thought it'd be, and completely stripped the taste of the spices in my cider. Again, just stating for those looking to keep their cider's flavor. (Posted on 3/4/13)

I've used this yeast in both an Orange Blossom Mead and a Apple Cider and will attest to it having agressive fermentation rates and leaving you with a very dry product. The FG doesn't get down to 1.000 but it definitely is dry! So if that's your goal - this is the yeast to reach it. (Posted on 10/21/12)

I used this yeast for my first stab at hard cider. It performs as advertised, took off fast and went strong for about 3 weeks ! I just tasted the cider for the first and took a hydrometer reading. It tastes ok ( young ) and the gravity is 1.005.
