Deceptively dark and beguilingly complex, this holiday specialty is brewed in the tradition of Belgian farmhouse ales. A generous malt bill with highlights of butter toffee, chocolate, dark fruit, and bread tangles with the earthy, spicy funk of Wyeast French Saison strain and a single addition of bittering hops to strike an evolving balance.

Unlike most saisons, intended to refresh and sustain farmers doing manual labor, this one is engineered to complement rich holiday fare and sustain you through long winter nights. The porter-like color tricks your palate into expecting burnt, roasty notes and perhaps even a full body, but the reality that hits your mouth is a lean, attenuated beer with a snappy, estery, slightly tart edge and a warming, peppery finish. No spices here - all the complexity comes from malt, yeast, and your skill as a brewer! Powerful seasonal sipper

I've only had this in the keg for a week, and it probably could have used a month in a secondary fermenter, but it's still really good. Next year I'll have to brew it in August instead of November, but I really like it. Lots of interesting spicy notes without adding any spices.

Excellent beer!

I brewed this Saison de Noel for the 1st time and it's excellent! Got an FG of 1.000. 2 weeks of primary, 2 weeks of secondary, cold crash and then into the keg.

Third time brewing it

This is my third time in 10 years or so brewing the Saison de Noel. I brew a big "holiday" beer every year, bottle it in Belgian corked bottles, and give it away to family and friends at Christmas. While it's early to report on this year's batch, I can say in the past it's been a wonderful winter warmer. I actually have one bottle left from 10 years ago that I plan to open along with one from this year- I've been fortunate enough to be able to sample them as they age. Defiantly it's a beer that improves through the years, though even when it's young its a fine, complex beer. It's a beer that's going to benefit from aging, so brew it in the spring and enjoy it that winter, though if you don't come across it until early fall, you've still got enough times to impress your friends come December!
