Don't let your friends know you're brewing this one, they'll probably invite themselves over just so they can drink the whole batch! Cynic Ale melds Old World ingredients in a new school style. French malted barley, English oats and Belgian yeast create honey & black pepper flavors. Lively Slovenian hops provide the floral, apricot and peach notes. Toss your doubts away, toss one back and enjoy!

A note on yeast: Surly uses White Labs WLP550; with Surly's blessing, we suggest Wyeast 3522 as the default option so customers (especially mail order customers) can more easily evaluate viability before brewing.

I love Surly just as much as the next person, but to basically call this a Cynic clone is misleading. The alcohol is lower than the original and the coloring is also lighter. Granted, depending on your brewing skills and equipment the final product will differ. The taste is still good and I love Saison-styles like this, but it is off from the original. I haven't tried any other Surly Pro-Series kits, but the Furious clone seems to be closer to the original's specs when looking at the instructions. I will have to try that next. (Posted on 12/12/13)

I typically make 4-5 Saisons each spring/summer. Made this for the first time this year and plan to add it to the regular rotation. The malt/hop combination is dialed in. If you chill to 65*F, pitch a starter, hold below 70*F for 72 hours and let rise to room temps (78-80*F), the yeast will work some serious magic. (Posted on 8/6/13)

Maybe something went wrong in the brew, but like another reviewer said, this one started out tasting fine when I pitched, and after 2 weeks before transferring to secondary but after 5 weeks it comes out of the tap somewhat sour with a yeasty bite that isn't all that pleasant.

I do like brewing unusual beers, and until now I felt pretty confident with the NB kits that get good reviews. I think I'll stick to what I know for a while though, this one is pretty left field. (Posted on 11/18/12)

I gave a sample of this to a certified beer judge and he could find no flaws. This was one of the best beers I have brewed, period. Extremely complex, a symphony of flavors on the palate. I decreased the IBUs to under 30 to get closer to Saison Dupont and that was the only perceivable difference. Color is spot on. I bottled with addition of yeast and it has the champaigne carbonation feel.

Had a party recently with 4 kegs of homebrew and the Surly Cynic was the most popular. So much so the keg is nearly gone. I think this is a good one to try if you have friends who aren't overly into beer. I haven't had the original so I'm not sure how close mine was to it. (Posted on 10/4/11)

I've never tried the beer this recipe is based on, but the recipe sounded tasty.

I missed the mash temp by a little (151 *F), and my OG was a little low at 1.049. I pitched at 65 *F and let it self rise to 82 before I noticed that NB says the yeast is good up to 85, but Wyeast says don't go above 76. FG was 1.014, which seemed really high, especially considering the low OG. Maybe the slightly high mash temp was to blame.

Anyway, the taste was very sour, to the point that I would worry about an infection if I had not previously tasted the sweet wort on brew day. I assume this is the acidulated malt at work, since there's a fair amount of it in there. Maybe this is what the commercial version tastes like? I don't know. But it taught me not to order a clone of a beer I've never tasted. (Posted on 9/26/11)

I brewed this one a bit back. I used WLP 565 just for the heck of it. The due to schedulingI left it in the primary for 3 weeks then in a secondary for another 3 weeks. No big deal. Obviously this should be similar to Surly's Cynical, but since I'm down here in the Southeast I only get Surly once a year or so from friends. This brew turned out nice, pretty color, light body, solid mouthfeel, and a nice balance of peppery flavors with fruit. I used the WLP550 strain (big starter) and it dried out well. I brewed this with 3522 and it is probably the only beer that i have brewed that both me and my wife loved. She likes wits like Blue Moon or Shock Top which i find boring. This beer is very complex without being totally funky. Great for the summer. Get it, Brew it, Love it! (Posted on 4/17/11)
