1.6-2° L. This is an exceptional Pilsner malt made in the traditional Bohemian fashion. The malt is raked and turned by hand in a floor-malting facility and given a traditional Bohemian malting schedule. The result is a slightly under-modified malt with unique and complex flavor. A must for a truly outstanding Pilsner beer.

Lovely flavor and aroma - just do the extra work to make it work!
This is a phenomenal Pilsner malt but you need to know what you're getting before you use it. This is NOT a highly modified malt, so you MUST do a protein rest. That's not a flaw with the malt. Figure on adding 60 to 90 mins into your brew day, with at least 30 mins for protein rest and of course 30 minutes additional boil time (which is common to all Pilsner malts). Treat this malt right and you'll be real happy with the results!

Great flavor and aroma, poor extraction with single infusion
I recently used this as a base malt for a M? rzen (9lb out of 11) with exceptional flavor and aroma. The mash efficiency with single infusion for 90 min (154 degrees F, pH=5.2, 1.5:1 qt/lb, Munich water profile) was only 62% though. If using this malt, I highly recommend trying a different mash schedule, as single infusion is not sufficient.I'm inclined to try the fully-modified counterpart in a future batch to improve the yield without using a more complex mash schedule.
