Elysian Brewing Company’s very first beer, The Wise ESB is the beer that put Elysian on the map as one of Seattle’s defining breweries. In one bold stroke, Elysian both resurrected the traditional English Extra Special Bitter style and reimagined it with a flavor profile born in the heart of America’s Pacific Northwest hops country.

First a local favorite, The Wise soon became the world-class brew everybody wanted…as well as a symbol of Seattle’s iconic beer scene. And now – 20 years and three Great American Beer Fest gold medals later -- homebrewers everywhere can brew a piece of this history themselves, with Elysian The Wise ESB Brewery Edition Recipe Kit.

We started with the authentic recipe supplied by Head Brewer Josh Waldman, then we tweaked and tested, added and experimented until we came up with the perfect combination of malty, hoppy, bitter and crisp. The result is a glorious reddish-copper ale that perfectly balances complex malts with bold local hops and sweet, subtle aromas of caramel, honey, citrus and a hint of pine.

We strongly recommend ordering dry yeast in the summer months. We do include complimentary Cold Ice Packs with all liquid yeasts. However, it is difficult to guarantee that the ice packs will survive the trip, given transit times and particularly hot temperatures.

Tasting Notes:

Reddish-copper ale that pours with a thin, creamy beige head. There are sweet, subtle aromas of caramel and honey, with notes of citrus and a hint of pine. Pleasantly bold hop flavors (bittered with Chinook, finished with Cascade and Centennial) against complex, malty depths. Well-balanced and delicious.

What's in the grain blend?

BEST ANSWER: The grain blend consists of:
1 lb Crisp Crystal 77L
1 lb German Munich Malt
0.25 lbs Weyermann Carahell
0.13 lbs Belgian Special B
What is in the specialty grains mix and in what proportions? For all the plaudits in the description, the ingredients look a lot like other northwest pale ales but maybe the grains hold the key to differentiating this brew. Historically NB has provided the breakdown for pre-mixed specialty grains in the recipe sheet so I hope this doesn't reflect a move away from that and towards intentionally obscuring what goes into a kit.

Which yeast produced the best results when you tweaked, tested and experimented to come up with the perfect combination?

BEST ANSWER: Our friends at Elysian recommended that we use the classic Chico Ale strain for "The Wise". The neutral nature of this particular yeast strain allows for the full expression of the malt bill and complementary hop profile. All three yeast options available for this kit are based on this strain and should deliver the great results we had in our brewcave. The choice really comes down to the brand/option that you are the most comfortable with. Personally, I am in love with Omega yeasts. Cheers, Todd J
