The secret is a high percentage of candi sugar, an easily fermentable sugar that ratchets up the beer's strength while keeping the body light and easy to drink. This is so unique. When you pour it into the glass, it looks like a jovial, golden party. But when you put it on your lips, a creamy, spicy clamor jumps in. And it is STRONG! If I drink one pint of this, I hafta take a nap! I clock mine at 9.9% abv. Watch out. Sometimes, I am ashamed to say, I will water it down a little. Just sooo ridiculously strong in flavor and ethanol. I was a patient boy and aged it for 4.5 months under 2 psi co2 in a corny keg. I tested it from time to time during aging and it really pays to not rush it. If you do not age it for 4 months, it is so strong in flavor, it tastes like ultra-malty cough syrup. Give it time. I'm finding out quickly that I like brewing the Belgians. I tried out the Stong Golden and was not disappointed. I take that back, I'm down to only 3 bottles left, so I'm a little disappointed. This has a nice citrus taste to it and it does get stonger with age. I may have missed my numbers by a bit, but I certainly can't taste it. I'll be brewing this again in the future. As a big fan of the Belgian beers, this has to be the best kit I've ever purchased. You're going to get a beer that looks like a comercial "light beer" but has the Belgian spicy flavor and 9% ABV. This beer reminded me of when I got my first introduction to Belgian beers, in Belgium, oh what a night that was... This is an amazing kit, and will remain in the regular rotation... A few months after bottling I cracked one open (in December) and it was fairly good. Now (in April) this beer is supreme. It has mellowed to sweet perfection with no alcohol taste at all. This one sneaks-up on you, watch out. (Posted on 4/23/12)Rating - Wow! What a kick Review by Stever

I did the step mashing as well and ended up with a very cloudy wort. It was still very cloudy going into the secondary (like orange juice cloudy). I added some finings which took care of some of it. I brewed this beer and tried the step mash for the first time. I use an infusion mash and the process was tough and I wound up with a very thin mash. After that when I pitched my starter it hadn't separated so I pitched almost 2 full liters of starter beer. I thought this would be a mess for sure. After 3 weeks in the primary and a week of cold conditioning I kegged it. I think it is the best beer I have ever brewed. It came out better that I could've imagined even if the brew day went perfectly, let alone a screwy brew day! It has that beautiful Belgian spicy flavor and packs a wallop that you don't expect when you taste it. Phenomenal and I highly recommend it if you like this style. I was surprised how great this beer turned out. The instructions are excellent and the brew turned out fantastic. This beer is great, and everybody who gets to try it agrees (though I've stopped sharing since the supply is dwindling). Mine has been aging for more than ten months at this point and it just gets better as the months roll on...
