An American-style wheat beer with a pound of pure honey. Because the honey ferments completely, it does not make the beer sweet – instead, it creates a medium-light body with a dry, crisp finish and delicate floral note. Our Honey Weizen has a lighter wheat flavor than our other wheat beers, and is sparingly hopped and clean with a slightly tart edge, a bit reminiscent of our Kolsch kit. Highly recommended as a summertime guzzler.

Brewed this up and it's a great beer, liked by both my beer snob and macrobrew-from-a-can drinking family members and friends.

If you're going to use the amount of corn sugar for priming solution listed by the recipe, then I'd go with 3 weeks carbonation instead of the 2 weeks like the recipe says. When I bottled this, I carbonated half the bottles for 2 weeks and the other half for 3, and the 2 week bottles are flat within a minute or two of being poured while the 3 week bottles are bubbling right up until the last sip. I did this for 4 weeks in the primary, then bottled. I changed things a little by boiling an extra pound of honey in with the priming sugar before bottling. This is among the best Honey Weizens I have ever had, and it is certainly a GREAT summer beer. I drink it with a half slice of orange to really bring out the flavor! Super popular, super easy, and AWESOME! Already ordered 2 more kits and an extra bucket to ferment in because it has been so popular with friends and family, and summer is just getting started! This was my first brew and I fermented for 4 weeks and will be bottling for at least 2 weeks. 5 days into the bottle conditioning I pulled a beer for sampling and within 10 minutes I pulled 6 more samples ;). My parents came into town and I had my dad try a glass. He is mainly a bud light drinker so I was worried about it. He sampled my brew and another Wheat brew. He thought my sample was the one from the liquor store and said it was very drinkable though it took him a few sips to get used to it. (Posted on 2/11/14)

This review is a bit premature since I have not bottled the beer yet. But I wanted to comment on the phone support. I have already forgotten the name, but I spoke with a brewer who advised a good kit to use with blackberries I had picked. I heated 8 cups of berries and 1 cup of sugar to 170 degrees for about 15 minutes and added to the secondary. Moved to a third carboy today. Smelled super - can't wait to bottle. (Posted on 9/28/13)

This is my second brew and I can say I'm very happy with it. I let the bottles condition for a week and tried it added a ornage slice and it was amazing. I'm going to let it sit for another week as I've heard that honey ages better with time. If you like weizens I would definalty go for this brew great summer beer. This is probably the only NB kit I have not liked. It is not bad but just leaves you wanting a little more. If you are going for something this style I would recommend their Kolsch kit or tweaking their American Wheat kit. If I ever did this kit again I would use a Kolsch yeast and give it a cold aging or add fruit. (Posted on 7/4/13)

Followed recipe except for adding two pounds of blackberries to the secondary. 1.040, final at 1.010. Tried one a weeks after bottling still needed more time. At three weeks it was amazing just a hint of blackberry. Going to brew again when the apricots are ripe. (Posted on 3/10/13)

It's a good beer - but after 1 week I was forced to rack to the secondary due to the massive amount of blow off. I let it sit in the secondary for 2 weeks - added a package of unsweetened lemonade to the mix and it had some real good flavor. Adding more honey to the mix only adds to the time needed for primary and also added to the blow off issue. (Posted on 2/22/13)

This is the perfect kit for a beginner to get started. The beer has all my friends talking home brew. I just bottled my second batch and am already tweaking the recipe. Took the hops down to 45 minutes and added a sock with .5lb of honey grain. This should be the kit they give with all their starter brewing supplies. This one turned out amazing. My favorite so far. Very simple and straight forward. It's got complex flavor, but a very easy drinker. Great with a lemon wedge or without. Perfect for a lazy hot afternoon in the backyard. This one will definitely make the normal rotation. Next time I think I might try the orange blossom honey instead and see what it does to the flavor. First off, it is darker then in the photo. More red/orange if you ask me. That aside it is a great beer that will be gone quickly. I added the zest of 1 lemon and 1 lime at flame out. Gave a nice lemon hint to the finish. My dad who doesn't venture farther than Bud Light found himself craving this beer during the work day. (I had it on tap next to the dinner table.) I gave it 5 stars for this reason.

Even my sisters girly-girl friends said it was the best beer they have ever tried. (Disclaimer: I dont think they've had much other than Keystone and Natty light).

Overall a very good summer beer. Dont expect it to last long. If/when I do it again I will add more citrus to it. (Posted on 6/18/12)

This is one beer I always have on tap. This by the way is very hard to do because everyone loves it. I have learned after a few years of brewing this kits that I need to buy two at a time to keep the keg full. Brewed this on 8/16. Used Nottingham yeast. Two weeks primary, one week secondary. OG was 1050 and FG was 1010. On 9/23 good carb and taste but green and thin. 10/9 Still a bit green but much better. I think this will be very good in a few more weeks. I would brew it again. (Posted on 10/21/11)

This is a really great kit. Ive made 2 batches of it so far.
The second batch I added an extra pound of honey into the secondary which really came out later in the taste.

I would personally recommend ageing this one a little longer than suggested as it really made a difference in my batches.
If you don't have the time to age it you wont be unhappy though.

I made this kit for the first time just about 6 weeks ago. I added an extra 2 lbs. of dry wheat malt to the kit as I was making 6 gallons. Since I didn't want to drag out my 15 gallon kettle, I just added my dry malt and enough of the liquid extract from the kit to come close to the O.G. specified and did a 3.75 gallon boil. I added the rest of the liquid extract at 50 minutes into the boil and that kept the color right. Since it was very hot in my area when I ordered the kit, I chose the dry yeast option. It did an excellent job and has stayed in suspension very well in the keg. I did only an 8 day primary fermentation at about 66 degrees in glass then straight to the keg. Chilled for a couple of days and force carbonated. Came out with a beautiful cloudy golden color with great head retention until you add the lemon. The cost of this kit and the speed with which it goes from kettle to glass make it an excellent choice as a summer refresher. I just ordered another kit so I can get another batch of it in before fall gets me craving more substantial beers. You can bet I'll go through several more next summer. (Posted on 9/3/11)

I added a pound per gallon of frozen raspberries to my secondary and let sit for 2 or 3 weeks. Came out great. Has wonderful flavor with a raspberry's tartness. Perfectly refreshing for this hot summer! Not sure if I will make it plain again. (Posted on 8/14/11)

i added the lme 20min in and 1lb extra honey at the finish. i used danstar nottingham yeast, and 2wks secondary.the bottles needed 6wks+, before this it was still kind of green and sharp, but after 6-8wks they were very smooth. the extra honey gets you about a 5.9%abv. i will make this again put it in a keg and it will probably be even better. I bought this kit with the intent of modifying it a bit. This is a very easy beer to make and at the bottling step I infused the honey weizen with peach. I used a liquid peach flavoring instead of pureed peach or organic peaches. It turned out great! You can taste the honey and the peach flavors. The peach isn't overpowering and just adds enough taste to the brew. After bottling this let it sit for another 2-3 weeks beyond what they recommend, it gets better with a little age. I've made perhaps 20 kits so far, and this is my favorite. I allowed a full 6 weeks in the keg before tapping it, and it was fantastic from the first pull. Mine had a nice color, very close to the picture, and a marvelous flavor with a hint of clove.

This was my second attempt at homebrewing first NB kit using Wyeast. Came out darker than the picture, and as I can't allow a beer to age properly I sampled this after one week in bottle. It needed the second week. Aroma is excellent and after the second week it has a nice creamy tan head. I only gave this 4 pints because I like a beer with a little more bite. (Posted on 3/8/11)

Good Summer beer. I agree with Chris O. that beer takes on a darker color when liquid extract is left to boil for the whole 60 minutes. Aroma is good but in my case the beer was a little under carbonated based on the amount of sugar stated in the instructions. This beer was had a nice bready body, with the typical Hefe haze. The beer wasn't full of flavor but, it would make a great session beer on a hot day. I would recommend adding the liquid extract syrup later in the boil, because if added to early it could take on a darker brown color than pictured. I also added a small amount (2oz) mango extract to the beer in the secondary, and the beer sucked up the flavor and aroma easily. It has been met with mixed reviews from peers. Those who like fruity beer love it, others think its too fruity. Overall, the beer is easy to make, but I would prefer something with a little more character.

Damn that {marshmallow fluff} is good. Brewed it for a friends birthday and it turned out to be suprisingly delicious. I actually kept a few beers for myself. A couple of my peeps said it was one of the best wheat's they had ever had. Definitly brewing this kit again. I added some axtra honey at the end of the boil, leaf willamette and some fresh squeezed oj and grapefruit juice before bottling. Yum. (Posted on 5/25/10)

I just made my first batch of Honey Hef... It's just as advertised, like a hef, but lighter. I kind of feel like if someone mixed a 1/3 coors with a hef and added some flowers you might get something like this. It has a floral note, as mentioned and the carbonation was excellent, even at only two weeks. I'll make the kit again, but mainly because I think most of my non-beer-snob friends will like it. One thing that I found particularly interesting is that this was extremely clear in the bottle. I could see though a brown bottle as if I had filled it with water (I was actually worried that I had screwed something up), but after pouring it, it clouded up within a minute of hitting the glass to look more like a traditional hef. I'm not sure what the science is behind that, but it's cool to watch. (Posted on 4/8/10)

I brewed this to suit the women-folk (wife and daughter) who enjoy good beer but can't hack Stouts and IPAs. I used the Wyeast American Wheat, and the brew came out right on the numbers for OG/FG. Although I prefer a little more IBUs in my beers, I must say that this kit generates an extremely smooth and pleasant beer. Not being a wheat expert, I can't compare it to the commercial brews. KEGGERS: be patient with this animal-- after a few days at 25psi, I would have rated this at 3 stars....kinda bland. I let it sit another few days at 12psi to finish up the carbonation, and it came into its own. Nice mouth feel, no bitter/sour aftertaste. I may add this to my #3 keg rotation for the summer, with a little extra kick of Cascades and maybe a second pound of honey from my uncle's hives. (Posted on 3/27/10)
