Stan Hieronymus (author of Brew Like a Monk) and our own Kristen England (BJCP Continuing Education Director) bring this special kit to your table. A wonderful example of a Belgian strong dark ale that brewed in the Trappist fashion. A very dangerous beer that seems lighter than its (approximately)9% abv would suggest. High carbonation, peppery alcohol, spicy cloves, rum-raisin and caramelized figs. Simply sublime!

Note: If you wish to achieve a level of carbonation similar to the commercial examples of this beer, add an additional 1 to 2 oz plain table sugar to the priming solution.

Kit Inventory

Specialty Grains

  • 1.50 lbs. CaraMunich Malt

Fermentables

  • 6 lbs. Pilsen Malt Syrup (boil for 60 min.)
  • 2 lb. Pilsen DME (boil for 60 min.)
  • 2 lb. Brown Belgian Soft Candi Sugar (end of boil)
  • 15 oz. Corn Sugar (end of boil)

Boil Additions

  • 1 oz. Tradition (60 min)
  • 0.5 oz. Hallertau Mittelfruh (30 min)
  • 0.5 oz. Hallertau Mittelfruh (5 min)

If you choose dry yeast

  • Not recommended.

If you choose liquid yeast

  • Wyeast #1762 Belgian Abbey II. Optimum temperature: 65-75° F.

All kits also contain a muslin mesh bag for steeping the grains (if required).
