We took inspiration from American-style foreign stouts for this recipe, combining high bitterness and gravity and an intense roasted grain character to make a pitch-black ale that can't be ignored. Strong, dark roast coffee with a shot of hops and background notes of tar, dark fruit, and caramelized sugar in the nose, giving way to a big mouthful of malt, roast grain, and more hops with a lingering bittersweet finish. Recommended: 2-stage fermentation and yeast starter.

I`ve reviewed this before.Added licorice and got a great result. This time I mashed 1lb maris otter and 1/2 lb toasted oats. Also added 12 oz bourbon that had oak chips sitting in it for 2 weeks. Aged 3 months and kegged. WOW ! If you like stouts and like to experiment this is the best kit out there to play with hands down. Thinking of what I will do next ! Thanks NB (Posted on 8/28/14)

A few months ago, this was my 3 or 4th try at brewing -- back in January (As of June, I have 24 brews under my belt now). The taste blew me away back then but I was told it only got better if you left it in the bottle. 6 months later, and it is still awesome but don't know if it's "better." It's definitely at least as good if not better than a quality craft brew stout. The "coffee" flavor might have mellowed out a tad but I'm going off a 6 month old memory.

So I held a few back. That has been difficult and, in retrospect, stupid of me.

So I'm gonna enjoy the ones I have left, hold ONE bottle back, order another kit and compare the old to the new. Whatever the comparison comes out to be, it was not worth keeping this from myself for so long. This is an awesome kit. (Posted on 6/19/14)
Add vanilla at bottling or kegging Review by Eric
Brews pretty much same flavor profile with either the liquid wyeast or safale dry. I added 8 ounces of $.97 vanilla from walmart to the bottling bucket when I brew. It makes for an even richer big honkin stout, two is all you'll want but you'll be very happy. On it's own this stout is full bodied, strong, sharply bitter but exceptionally balanced between the roasted barley and big hop roster. This is a stout lover's stout. Instead of vanilla extract, pour a 12 ounce bottle over a scoup of vanilla ice cream in large (24 ounce or more) glass and serve with a long spoon. OMG, you will love it. (Posted on 3/30/14)

1st time brewer, Deluxe kit and got the Big Honkin Stout instead of the Caribou Slobber. I even messed up and reversed the hop order and ended up throwing all the hops in in the beginning. Today was the day at 2 weeks bottling...nervous-did I screw it up? (was going to wait for 3wks but got anxious to see how it was). Wow! As good as any beer I have had! I may never pay for beer again at a store. Have a pale Ale on the carboy and next is a milk stout to try to be like Left Hands. This was an easy recipe also if you pay attention. Brewed according to directions but added 1/2 stick brewers licorice and used 2 us-05. Two weeks primary 3 weeks secondary.Bottled for 4 weeks. What a great powerful stout to wake up your senses. One of the best I have ever had. Malty with a definate hop taste and little licorice backround. Will be kegging this next fall for sure. Like an Imperial stout with less abv. Brewed October 20, sampled first December 14, was a bit thin and still mildly undercarbed. Given another month, it has mellowed out nicely and carbed up well. This is a very tasty stout. Used WYEAST 1056 with this and ended up fermenting too warm. Bumped up ABV with pound of demera sugar and pound of dark DME. Tasted at 2 weeks and it was very fruity. Plan to keep in primary to about 4 weeks then transfer with oak chips soaked in rye whiskey for a few months. (Posted on 12/23/13)

This is our favorite extract kit and we have tried over 20 different kits so far. It starts off with a chocolate malty taste and finishes with a noticeable hop taste. The alcohol content is a plus and increases the shelf life compared to a normal 5 gallon kit. I highly recommend this kit to dark beer drinkers. (Posted on 8/4/13)

I did this one a bit different than the instructions by using the flame hops for dry hopping. Right out of primary this beer was really great, I still let it sit for a full month before kegging but it didn't change much for me. Made a 5 gallon extract kit of Big Honkin. Primary for 4 weeks at 62 degrees. Bottled and waited 3 weeks.
Tried the first one and it was amazing, even though it will likely get even better. The head was a dark tan. Thick, rich and full of flavor. My favorite beer yet.

What a wonderful beer. This is the first beer I've placed in a secondary and it was well worth the wait. I did slightly modify the recipe. I added in an extra ounce of Nugget Hop at the start. Imagine a Guinness, but without the nitrogen, and more than double the ABV. Nice rich head on it, took a couple weeks longer than usual to carbonate, but that was the high gravity. Clean, crisp, mellow taste. I like it! (Posted on 3/25/11)

I didn't care much for this brew early on but I wanted my son to try some as he prefers a strong stout. I left a quart in the fridge for him and it was about a year before he was able to visit. Awesome! Smooth, creamy, chocolatey, sublime. During the boil I actually let it boil for close to two hours (full boil) and brought it down to 4 gallons in the primary (O.G. 1.084) Then aged on oak for a month and POW! Awesome mistake on my part. Planning on repeating! (Posted on 5/11/10)
