Brew summary: I used the dry yeast and did not create a starter and did not hydrate the yeast prior to pitching. I also followed the advice of others and dry hopped 1 oz of Cascade pellets. I transferred to a secondary and dry hopped in the secondary for 5 days.

This beer was much better than expected. It's very similar to SMASH and the Chinook IPA. All three beers are relatively low ABV but with lots of flavor - but not too much "over the top hops" like you can get with some IPA's. I will definitely put this on my list to brew again. I would recommend the dry hopping.

I brewed this beer for a buddies hockey team and they loved it. 2 cases disappeared in about 45 minutes. I followed suggestions in the comments to add 1oz. of Cascade hops to the secondary fermenter. This added a wonderful balance to the brew. I would classify this beer as a lighter version on an IPA. So if you don't want to be over hoppy this is definitely a brew for you. I've brewed the extra pale ale 4 times now, over the course of about 3 years. NortherBrewer has changed the recipe a bit here and there, and each batch has turned out great. Its good! If you're a new brewer, follow the recipe EXACTLY and nothing can go wrong. If you want to dry hop it, thats your choice but you risk contamination if you put it in a secondary. If its your first brew, and you like hoppy beers, give it a go! (Posted on 11/22/13)

This was a great kit. It was my first brew but it was straight forward which meant it was low stress and enjoyable. The result was a nice, tasty pale ale. I did dry hop with 1oz cascade leaf hops in secondary, just because I can't help myself when it comes to hops. I brewed this as a partial-boil extract kit with WY1056 at 70F and bottle-conditioned it. This was amazing when it was fresh. Despite the hop bill, it wasn't overly bitter. First homebrew. Added a pound of lite DME and dry hopped with an ounce of cascade and an ounce of centennial. Left in primary 3 weeks.

I thought I had ruined this beer after having siphoning problems. However, I just opened a bottle after 6 days and I am very impressed with the taste of this beer. I just hope I don't drink them all before the next 3 weeks is up so I can taste them at their peak.

Great Beer With Room for Hops Review by Andrew
This pale ale is my favorite that I have brewed so far. It really started to shine after it had been bottled for about 4-5 weeks after a 2 week primary. I have gotten a lot of compliments from friends and family.

My only improvement would be to dry hop the beer for a bit to really pop the aroma (everyone else here has the same opinion). If you are looking at this kit for the first time, do it! Also spring for an ounce of cascade to dry hop the beer.

I felt this kit was a good, basic pale ale, very drinkable but not quite as complex as I would have liked. An additional grain would likely improve the malt character and push this beer a little further. I would have rated it 3 stars but it got the additional star because of the price. A extremely drinkable pale ale, I had it in primary for 2 weeks then racked to secondary for 3 weeks. I bottle conditioned for 3 weeks and was surprised how good it was when I first had one. This could easily be served at a bar, tastes similar to Sierra Nevada Pale Ale but a little lighter and more drinkable. This was my first home brew and a great introduction to the hobby. I have brewed and am currently enjoy a batch of extra pale ale. It is great! 2 weeks in primary, 2 weeks in secondary and 3 weeks bottle conditioning. Dry hopped in the secondary for one week with the last dose of hops. I do have a question though...I find it a bit "dusty". I use irish moss when I brew. I added 1/2 lb Briess Carapils and 2 cups Lite DME (15min). Just starting to pop the tops on a few. Nice full flavored beer - Lighter than the IPAs (Black and Dead ringer) i've been drinking. I'll brew again. I ferment in a 6gal glass carboy in the basement. I set it in a pan of water and stretch a t-shirt over the carboy to wick up the water and keep it cool. This was my third brew and it turned out to be one of the best beers I have ever had. I added an extra pound of light DME (wanted a higher abv), and 2oz of Citra hops. I added 1oz of the Citra in the last 10 mins of the boil and used the other oz for a dry hop in the secondary for a week. Also, instead of the 2oz of Cascade at the beginning of the boil, I only used 1oz and used the other oz at 30 mins (I was afraid it would be too bitter if I used the full 2oz at 60). 14 college buddies- 3 Homebrewers- 4kegs. We started with a keg of Stout, had two versions of an American Ale, and this EPA was a nice way to end the week. It had a very full flavor that finished very clean. I did 2 weeks in primary and 4 in secondary- finished with 4.5%ABV. This was my first solo attempt at homebrewing, so we need to take that into consideration here. I rocked 2 weeks primary, 2 weeks secondry, and 2 weeks bottle conditioning. After the 2 weeks in the bottle, this beer still tasted a bit lacking in the mid-palette which was my only real complaint. I would say mine came out tasting like what Minnesota's Summit EPA would taste like if they made a "light" version of it. So really not bad by any means, just not as good as I hoped. The flavor is okay, it needs something. The EPA could be a bit stronger, but it still comes out as a great sixer to split with my boys in the garage.

My brother brewed this for our engagement party- we had all sorts of other beer and alcohol at the party but this was what EVERYONE drank. This beer single handedly got myself and two others into brewing. Excellent session beer, very light malt, nice grapefruit back and hoppy nose. I made this as my first brew. Instructions are easy to follow. I dry hopped with 1oz amarillo like some others here; wonderful aroma!

This was my 1st brewing experience and, thanks to NB, it was fantastic!! I give NB most of the credit because all I did, besides sanitizing everything carefully, was follow the instructions that came with the kit. This Extra Pale Ale rivals the best pale ales I've ever had. It has tremendous flavor- pleasantly hoppy and refreshing, without being too bitter. My best Pale yet. Drank this two weeks after bottling, very good, well balanced. This beer had less of the "extract" flavor than any others I have brewed. (Three Hearted, Sinistral Warrior, My Own Recipe)

I also dry hopped this for 9 days with 2oz of Amarillo.

I tapped the keg last night and WOW!! They did a great job with this kit! The beer spent 5 weeks in the primary and 2 weeks under 6psi in a cold keg. There is a lot of back end on the hops, not so much initial bitterness but the flavor and aroma is astounding. Reminds me alot of Gumball head from 3 Floyds. I love this kit because the recipe is simple and the results are always good. Every time I make a major upgrade to my gear or process I try re-making this kit. It's gotten better every time.

I recommend the liquid yeast and the creation of a 1000ml starter. Make sure you chill the starter and pour off the nasty starter beer. Keep the fermentation temperatures below 65F. I've had great luck fermenting for a week in primary, then 2 weeks in secondary, then two more weeks in the bottles at an ambient 70F to carbonate.

I found the malt flavors to improve quite a bit by doing a full boil and using a wort chiller. I start with 5.5gallons to cover for most of the evaporation loss. (Posted on 6/18/10)

I just had my first bottle of this. I added two ounces of Amarillo hops to the secondary to push the hop aroma/flavor even further and it really came out great. Honestly, a lot better than a lot of commercial APAs I've had. I fermented it very cool - around 58 degrees and the beer is exceptionally clean tasting, letting the hop flavor really come through. Tasting the first pint from the keg as I write this. It's got a nice hoppy bitter finish without going crazy. Not quite the hop level of Victory Hop Devil or Dogfish 60 min IPA, but still excellent and nicely balanced. The citrus aroma and finish of the Cascades is classic IPA all the way.
