Deceptively dark and beguilingly complex, this holiday specialty is brewed in the tradition of Belgian farmhouse ales. Unlike most saisons, intended to refresh and sustain farmers doing manual labor, this one is engineered to complement rich holiday fare and sustain you through long winter nights. A generous malt bill with highlights of butter toffee, chocolate, dark fruit, and bread tangles with the earthy, spicy funk of Wyeast French Saison strain and a single addition of bittering hops to strike an evolving balance.

The porter-like color tricks your palate into expecting burnt, roasty notes and perhaps even a full body, but the reality that hits your mouth is a lean, attenuated beer with a snappy, estery, slightly tart edge and a warming, peppery finish. No spices here - all the complexity comes from malt, yeast, and your skill as a brewer! Smooth process, great outcome!

This was my 4th kit from Northern - was looking for something more seasonal after having good experiences with the Amber Ale, IPA, and American Wheat (which I added some Apricots from my backyard to...very nice!) The Saison yielded about 4.5 gallons and came in at 8.3 ABV. You can taste that ABV but it isn't cloying; bottled on 1/11 in hopes of enjoying one during the Indiana/Miami game next week.

Did two of the dry yeasts per recommendation, and this led to the most aggressive fermentation process of any of the brews yet. Would recommend for winter brewers and those looking for a departure from the more common recipes.

My go-to beer

Six weeks is a long time when you want a beer but it is well worth the wait for this one. I have not measured the avb but I would say it is 8-9 because you totally feel it from just one twelve oz. bottle, two hits the spot but don’t drive. The flavor is very nice, like a craft but not heavy for a darker beer. I recommend it.

So bottled it 2 weeks and am going to try it tonight!
Looks carbonated and during bottling seemed it would be high gravity. More news to follow!
