Tella or Talla is a traditional beer from Ethiopia and Eritrea. Tella can also be known as Farsoo or Suwa.
Tella is brewed from grains, with other ingredients including teff, sorghum, barley, wheat, or maize, and often includes honey. Gesho (a species of buckthorn) can be used in a manner similar to hops.
180-250° L. Less highly-roasted than regular chocolate malt. Adds color and a mild chocolate/coffee flavor to dark milds, stouts, and porters.
160° L. Very dark English crystal malt with deep amber color and burnt sugar and dark fruit flavors.
Medium attenuation, low flocculation. Good all-purpose ale yeast. Optimum temp: 57°-77° F
