Briess Midnight Wheat Malt
550º Lovibond. A very dark roasted malt that provides body with very smooth and mild roasted flavor along with intense color. This malt won't add the bitterness or astringency of other roasted malts like Chocolate or Black Malt. Made from Wisconsin wheat.
Flavor & Color Contributions:
- Malt Style: Bitterless Black Malt
- Flavor: Subtle, smooth No bitter, astringent, dry flavors or aftertaste. Starts slightly sweet. Hints of roasted flavor. Finishes exceptionally clean. Midnight wheat is the smoothest source of black color of any malt available.
- Color: Dark brown to black tones

Made my first beer with this. Was a wheat heavy imperial stout. Turned out great.
Worked well for my sweat stout I did. Dark and smooth.
I used 1 pound of this dark wheat malt to add color and some body to a Pilsner base malt, to create a dark lager . I ended up with a very black wort with only a 15 min steep, added some black licorice and star anise in the boil and now it’s lagering at 48 degrees . Test sample had some coffee notes and a slight anise aftertaste , light in body but very dark color . Plan to cold crash and filter in a couple of weeks.
Gave a nice toich to my alt bier
Great alternative dark malt. Still tastes "dark" but smoother and not as in-your-face as roasted barley. Great in porters and dark what beers.
