Packed with the best ingredients, our Chocolate Milk Stout recipe kit delivers a milk stout brewed with lactose sugar for body and residual sweetness, then laced with pure cacao nibs in secondary. The lactose is unfermentable by yeast, so it adds a milky, creamy, rich sweetness and lots of body. To make it even more irresistible, we load it with exotic cacao nibs, the seeds that give us chocolate. Unrefined as they are, cacao nibs bring light fruity notes, sumptuous delicate chocolate, and hints of earth to your hand-crafted brew.
Look for an opaque ebony pint capped with dark foam and a flavor reminiscent of straight espresso laced with chocolate liqueur and sweetened with turbinado sugar. Smooth, rich, with nice brown frothy head and a roasty toasty follow-through. Used the S-04 yeast and fermented at 67 deg. Did not transfer to secondary but added cacao nibs to primary after primary fermentation. Transferred to keg after 2+ weeks. Took longer than normal to carbonate but got there. Alcohol came in at 4.6%. Will be a hit with anyone that likes this style of beer.
I just racked this to secondary on top of the Cocoa nibs that had been in Vodka for the last day. This beer, warm and flat, is amazing already. Can't wait to taste it with the chocolate and carbed. This one is going to be all for me. No sharing.... Don't even ask.... (ok, I guess I'll share if you come over...)
Turned out great, used S-04 and fermented at 64 degrees, nice chocolate taste with a hint of coffee/roast and nice sweetness, overall turned out really well and one of my top 5 brews to-date. Only unfortunate thing is keg is almost already gone!
We combined this kit with vanilla beans and strawberry flavoring for a Neapolitan Milk Stout. It is sitting in a conditioning keg for a week but we carbe it and it tastes good but our reasonable expectations it should be really good in a week or so.
It came packaged perfectly with the best instructions of any kit. I use the grainfather brewing system so this is perfect.
