Brewing Notes

  • Style: Wheat Beer/Fruit or Spice Beer
  • Fermentation Range: 65-70F
  • Original Gravity: 1.048
  • SRM: 4.5
  • IBUs: 22
  • ABV: 4.7%

Tasting Notes

  • Aroma: Soft wheat malt with very low spicy and herbal hop aromas. Clean fermentation profile. The prevailing aroma is provided by the specific fruit puree used in the beer.
  • Appearance: The base beer (without added fruit) is a deep straw to vibrant gold color with moderate haziness and a firm, lasting and brilliantly white foam cap. The final product will take on colors of the specific fruit puree used.
  • Flavor: Supple wheat malt flavor of fresh bread and faint biscuit with medium-low bitterness. Medium fruit-specific flavors round out the profile.
  • Mouthfeel: Medium bodied with a smooth creaminess and medium-long finish.

Brad’s Notes:

“Wheat beer and fruit - the combination is pretty much a guaranteed win. Beginning with a straightforward yet satisfying American style wheat beer base, fruit puree is added towards the end of fermentation to turn an otherwise ordinary wheat beer into a complex, fruity sipper perfect for any day of the year. The use of American Ale yeast provides this beer with a crisp and clean flavor profile as to not interfere with any of the flavors of wheat and fruit, while the single hop addition adds just enough bitterness to balance out the sweetness of the base beer and the added fruit to keep the final beer from finishing overly sweet. Dead simple and delicious!

Here at NB, our staff favorites were raspberry and apricot, but give it a go with anything you care to! For other fruit flavoring options, see the link above to view our collection of gourmet Silver Cloud flavorings.”

Pretty good sipper

I did this kit with Blueberries i picked off my bushes rather than the pre-made puree. Ended up being a pretty pleasing summer sipper. Tips for using fresh stuff is to freeze it first, , heat them to kill the wild yeast and germs, then puree and finally strain off the seeds and skins before adding.

Kit was for a 5 gallon setup,!im using a 1 gallon starter kit, easy to divide ingredients, just had to buy more yeast.

Haven't brewed yet but hoping it will turn out well when I soon do.
4 ****'s for now as my past NB brews have all been good - will update after I brew.

Great base wheat beer

This was my first time doing a fruit addition and I am very pleased with the final result. As always, the kit instructions were clear and easy to follow. I think this would be a nice tasting beer on its own without any additions. I skipped the purée and extract options in favor of frozen fruit purchased at my local supermarket (7lbs) added as fermentation was winding down. I just added the fruit from the bag figuring that the commercial preparation of the fruit and existing alcohol in the fermenter would reduce the risk of contamination. I used muslin bags to prevent clogging on transfer. Worked like a charm. Doing this one again.

Good Beer that I flubbed.

Great Wheat beer. I tried to go bold and do a Blueberry secondary fermentation on it and am just not pleased with my end result. I think something more citrus would have made the beer pop a lot more than mine does. Overall the beer is great and mine tastes pretty good but it's just not quite what I was hoping to get.
