Inspired by the classic Flemish Red Ale, Heiress de Bourgogne is a deeply complex sour red ale with notes of raisins, dark stone fruits, and a delicate tartness.

Utilizing the popular and unique kettle-souring method, Heiress will develop its tart, sour character in mere days instead of months or years without the risk of contaminating other batches. The resulting beer will mature rapidly into an elaborate menagerie of flavors, all bound within its deep ruby, medium-bodied elixir, and topped with a voluminous off-white head.

Sour beer

This kit made a very nice sour beer. Rich color, great not too hoppy taste. I like the Belgians (made the double and tripels from NB) and this was that style for sure. The kettle souring worked great. I did buy a cheap pH meter and monitored it to pH 3.7 resulting in a sour, but not-too-sour product. That took about 2 days. The fermentation went for 3 weeks (1 week in primary, 2 in secondary). 3 weeks of carbonation. I used the can of priming sugar for the first time-very convenient. Just had one today-nice! Starting gravity was 1.07, ending was 1.02.

I brewed up the Heiress for my wife who loves Belgians. It's so good, I so sometimes drink a different beer just because I don't want to run out of the Heiress. I will definitely be making it again soon.

I made this for a friend and he gives it 4 Stars 😁

My friend loves sours so he bought the kit and I made it for him. I took it to 3.5 sourness on the ph meter (2 days in the kettle) which seems to be right if you want a sourness without puckering your mouth and lips. I used the dry yeast. My buddy says this is a good tasting sour and worth the $$$.
