Today is the 12th day of fermentation. After 8 days I racked the wine from primary to carboy with oak chips. It started with 6 gallons in the primary but I’m more than 2 inches from the neck of the carboy so I know when I repack it into the carboy without the oak chips I’ll need to add a finished cab sav so I already have a bottle on hand. I plan to re rack back into the carboy tomorrow as I’m sure the gravity is under 1.0. So far so good as per the directions but won’t know how it tastes for another month or so.
I don't drink wine just enjoy making it and giving it a way. With this wine everybody that I gave it to wants more they just love it. I will have to take their word for it.
I am a home brewer and in late 2019 started wine making. This is my fifth batch. Wine making is easier than brewing and these kits from Master Vintner have all been excellent. What's helped with this one is my extra experience - bottled it a few weeks ago. ABV was 13.6% (always a good sign that I did things right). Have not uncorked a bottle yet but the taste going in was superb, full bodied.
