Worry free

My first purchase of C&K kits was back in 2008. The instructions and kit contents made it super easy to make a commercial grade mead/melomel. I strongly recommend starting with one of these if you are looking to expand into honey wine

get an extra corboy

This is a very smooth, dry, high alcohol drink (wine, kind of) that is much better after a year. I liked it at 6 month, although looking back, it still was a little hot alcohol taste. But at a year, so smooth.
I don't really make beers anymore as I seem to prefer mead, wines and dry ciders. I would recommend making some and then forgetting about it for a year or more. Some reviewers complained that it is too dry. It is dry (and good). If too dry they could back sweeten it.

Not what I was expecting

It will be a year in August and there still is a harsh alcohol taste. This is not a sweet mead and is very dry.

Bone Dry

I was hoping for a sweeter mead, like the description, but it fermented bone dry. It has an excellent raspberry flavor, though. I would love to try it again with a different yeast.
