Medium-bodied with the flavor profile of a Bavarian Hefeweizen, but laced with tart, fruity raspberry aroma and flavor. Natural raspberry extract added to taste at bottling lets you tone down the fruit or turn it way up, as you prefer.

I'm new to all grain. Although I carefully measured the ingredient quantities and checked the mash with tincture of iodine to make sure conversion was complete, my specific gravity came out a little on the low side with a start of 1.36 and a finish of 1.06. It's still a very tasting good beer. I'm going to try it again with a little DME to adjust the specific gravity before the boil if needed. I've been reading up on how to do this.

Great summer beer

This was my first time I ever added fruit to beer so it was an experiment. I also don't drink beer/ale with fruit in it so I really can't judge what I made. However, going on the reaction of my friends I think I nailed this one. I made the wheat beer as normal. I was going to add the Raspberry extract at kegging but happened to have a nice harvest of fresh raspberries from my Vermont garden at that time. After some research on quality and preparation I settled on 1 pound of berries per gallon, so used five pounds of raspberries. I blanched them in boiling water for 60 seconds in a colander then immediately cooled them in ice water. I did not crush them. I put in the carboy of finished wheat beer, added the airlock and let it sit for five days before kegging. The berries actually turned from red to white while the color and I assume flavor went into the beer. There was some additional fermentation from the sugar in the berries but not significant. After five days I cold crashed it, then kegged it. Turned out awesome with a nice light fruit flavor over the wheat backbone. Even I like it. I'll do it again next year at harvest season..
