More About Fruit and Spice Beers

Fruit and spice beers are a creative category that allows brewers to push the boundaries of traditional styles. Apples, cherries, raspberries, and citrus are frequently paired with baking spices like cinnamon, nutmeg, and clove to evoke flavors reminiscent of desserts, holidays, or warm seasonal drinks. These beers often start with a malt-forward base—like amber ale, brown ale, or wheat beer—providing a sturdy canvas for layering complementary fruit and spice character. Spiced Apple Ale is a perfect example: familiar, drinkable, and just adventurous enough to surprise and delight.

Spiced Apple Ale Extract Beer Recipe Kit

Delivery, packaging, instructions etc. were perfect, so the low star rating has nothing to do with the service which is awesome. The brewing seemed to work fine. Good active fermentation for a week and a half, then moved into a secondary fermentation for another week and a half. I tasted the beer before adding the apple spice vials. It tasted like flat beer, but not very good. I then added half of each flavor vial. It brightened the beer quite a bit and you could taste a bit of green apple. It was good. After mixing in fast pitch, bottling, and letting the beer condition in ~65 degree basement I gave it a taste. The beer was flat and didn’t taste good. I fed it to the drain. :( I’ve tried 6 more bottles over the last couple of weeks. All of them were the same.
