Wyeast 4021 Dry White / Sparkling strain ferments crisp and dry. Used in: Dry White Wines, Spumante, Sauvignon Blanc, Semillon, Pinot Blanc, Gewurtztraminer.

AKA Prise de mousse. Used in many white wine fermentations and also some red wines. Also used for secondary fermentation of barley wine. Ferments crisp and dry, ideal for base wines in champagne making. Low foaming, excellent barrel fermentation, good flocculating characteristics. Dry White Wines, Spumante, Sauvignon Blanc, Semillon, Pinot Blanc, Gewurtztraminer. Temperature Range: 55-75 F. Alcohol Tolerance: 17%.

this yeast is merciless

the tolerance of this yeast is around 17% and it will get there if the sugars exist.
I made a batch of mead using it, and tastes exactly like a dry white wine, there does not appear to be a thing as unfermentables for this yeast.

on a technical note, it has a very low amount of foam when fermenting, but if allowed to bottle condition gives a nice "champange fizz" when opened.

over all I'd give it 4-5 stars, its good but you need to know what you want to get out of it to begin with.

The yeast worked very well and produced a nice wine.

Worked well but perhaps not worth the extra cost

I used this yeast to ferment a Grand Cru International Sauvignon Blanc kit wine. The wine was very good but, to be honest, I didn't detect much difference compared to the Red Star dried yeast I would normally use.
