Wyeast 3944 Belgian Wit strain is a tart, slightly phenolic yeast capable of producing distinctive witbiers and grand cru-style ales alike. Alcohol tolerant. Apparent attenuation: 72-76%. Flocculation: medium. Optimum temp: 62°-75° F

Love this yeast.

Fermented a witbier between 65-72 degrees. Kegged it at 2 weeks and and it smelled like a banana bomb and tasted like it. The smell went away slowly and the taste became that belgian spice I was looking for. Subtle, but very good. Highly recommend, but have some patience with it.

I used this to brew a Belgian style white ale and the yeast was fantasic! Fermentation was strong and steady and it worked great.

Worked Well -- Too Well?

I've used this yeast before alongside the 3942, and don't remember which one I preferred. Did a perfectly acceptable job, though, and actually took my FG down a couple points below the style range. But the beer's good so that's what matters. Heed the warnings about this strain being a true top cropper and give it plenty of headspace, or you'll have an exploding, oozing, foamy mess.
