Wyeast 1007 German Ale Yeast
Ferments dry and crisp, leaving a complex but mild flavor. Produces an extremely rocky head and ferments well down to 55° F. Apparent attenuation: 73-77%. Flocculation: low. Optimum temp: 55°-66° F

This yeast was wicked excited! A couple days in it was clogging the airlock and launching the bung and airlock a couple feet away. maybe don't fill that 5 gal carboy to the top line.

Love this yeast. Set and forget at 60F. Ferments clean and attenuates well. Low floccing so be prepared for cold conditioning or use some finings
Used it to accidentally brew a Kolsch. I ordered an Alt and Kolsch at the same time. Wound up brewing the Alt with Kolsch yeast and the Kolsch with the Alt yeast. Turned out a little ‘untraditional’ but still very very tasty!
