I did not use WYeast 1318 London ALE

Standard Hazy yeast

I always get this yeast if I am brewing a Hazy IPA. As another commenter mentioned, I always get a liquid yeast no matter the outdoor temperature during shipping. Northern Brewer does a good job insulating it for transit and I settle it back to refrigerator temperature for a few days before I use it anyway.

Despite warnings on the website about ordering liquid yeast in summer months, I ordered it during a 96F heatwave. They packed it with ice that was melted upon delivery, which I expected. Made a 2 stage starter just to ensure the yeast was in shape. Worked great. Had never used this particular strain before, and was initially unhappy with the result. But, after 7 weeks of aging, I can say this yeast is a powerhouse of flavor. You just need to be patient with it. It works well with age. Go with a kviek if you need something that ferments quickly. But it did incredibly well, even though my fermentation temp spiked to the high 70s (79F). Beer went from 1.053 to 1.012 in 3 days, and then settled to 1.009 after 10 days. Like I said, age did the flavor well.

Everything came as expected

Got everything I ordered in good condition. I forgot to put liquid yeast in fridge right away but they survived and the resulting brew (an amber ale flavored with apples and cinnamon) turned out very well!

Made absolutely delicious Hazy NEIPA!!!

I used the Wyeast London Ale III Yeast to brew an incredibly delicious Hazy New England style IPA. The yeast allowed for the hop character to shine through. Absolutely amazing yeast. And the yeast allows for wonderful attenuation. My OG was slightly low; and I didn’t think that I’d hit desired ABV. Actually FG was lower than expected and thus my batch hit desired ABV of 7%. I’ve used this yeast before and will continue to use in the future for my Hazy IPAs. Just one warning: This yeast gets very active; so I no longer use an airlock, and instead use a blow off tube...when I once used an airlock with this yeast, the krausen, even with plenty of headspace, pushed up through the airlock and made a royal mess of my “Son of fermentation chiller.”
