Great yeast

Used this in a high gravity Belgian Strong Ale, with a 1.5L Starter. Did exactly what it was supposed to. Great product.

Trappist HG Yeast

Used this on a 3.5 gal "Westy 12" clone recipe. Made a 3 liter starter due to the OG (1.096) of this quadruple recipe. Fermented in a 5 gal glass carboy, and it very nearly came through the airlock. I replaced the airlock with a blow-off tube arrangement, for safety sake, but next time I'll start with the blow-off arrangement. I top-cropped a cup or so at high Krausen, and used some of this to add back for bottle conditioning (due to the recipe's alcohol development and longer conditioning time). In secondary, the yeast flocs out nicely with a little low temp (60F) conditioning. And after bottle conditioning it stays put nicely during pouring. The beer is one of the best I've produced, and I've ordered ingredients to repeat it in the coming weeks.
