Wyeast 3787 Trappist High Gravity strain is a robust top cropping beer yeast with phenolic character. Wyeast 3787 Trappist High Gravity beer yeast has an alcohol tolerance to 12%. Its ideal for Bi¨re de Garde, as it ferments dry with rich ester profile and a malty palate.

Apparent attenuation: 75-80%. Flocculation: medium. Optimum temp: 64°-78° F

NOTE: During summer months, we include complimentary ice packs with all liquid yeast orders. However, it is difficult to guarantee that the ice packs will stay frozen given transit times and particularly hot temperatures. For this reason, we recommend ordering dry yeast during summer months.

This yeast is a classic for Abbey-Style ales. If you are interested in making an authentic version of the styles (Dubbel and Trippel), there is no better choice than 3787. Be forewarned, however, you WILL need a blow-off tube! I made 20 gallons. That is how confident I am about using this yeast. BJCP National Judge since 2000.
