Awesome flavor profile
Came out with an awesome flavor profile. Incredible taste. After using this yeast once, one thing that I would highly recommend is to keep an eye on how quickly it works. This strain of yeast is in fast forward, so if you let it work too long you will get some off flavors. I expect that this is where some of the negative reviews are coming from. I was blown away by how fast this yeast finished fermenting my 5 gallon batch. After 5 days primary it was finished and went straight to bottle with more juice. It finished carbonating at 3.5 vols in 24 HOURS. Fermentation temp was 62 degrees.

liked it a lot!
Not too dry and not too sweet. I'm partial to sweet, so I'd say that it would have felt better if it finished on the sweet side, but it is very tasty despite my personal taste preference.

Great cider yeast
I made 9 gallons of pear cider recently and used the Wyeast 4766 for 5gal and Lalvin EC1118 for the remaining 4gal. I tasted both after a week of fermentation and the Wyeast was so much more crisp and clean. I'll definitely be saving this to use again for future projects.

Crisp Cider, Somewhat yeasty flavor
I used this yeast for an apple/pumpkin cider I brewed. The recipe called for champagne yeast, but this was all they had in the store. The resulting cider was very crisp, but sill had a bit of a yeasty flavor to it. This may be more indicative of the recipe I used than the yeast, but should be considered when considering a lightly spiced recipe.

Good yeast, watch your FG
I created a starter with this yeast and it really rocked for over a week on 4 gallons of cider and 2lbs of honey. I would recommend you check your FG a couple of times as it runs down to get the sweet/tart/dryness where you like it. I started 1.062 and my hydrometer drops like a stone in the end product. Very very dry, but that's not the yeast's fault, my execution, they did a very good job!

Great for a balanced cider
Purchased this yeast for a cider recipe I was working on. My previous batches using champagne yeast were a bit too sweet so I wanted something with greater attenuation. This did the trick. My only complaint is to be careful of ordering it during summer months in a warm climate - though it ships with a cold pack, it may not be enough if your yeast are delayed in arriving (as mine were).

great cider
I have had great results with this yeast. It has worked well with all my cider configurations, most notably my last batch of apple/peach/passionfruit. Although one of the smackpacks on my last order was already smacked, not the yeast's fault.

I just started with only a one gallon fermenter is this acceptable for it and if so how much do I use?

BEST ANSWER: This yeast is for up to 6 gallons so I would divide the volume into 1/6th but you also do not want to let this sit after opening. The yeast has a nutrient packet inside that is activated and will cause the yeast to start working relatively quickly.
Is it nessessary to do a secondary fermentation with this particular yeast if I were aiming to produce a cloudy cider? Additionally, would my flavor profile be compromised if I skipped a secondary fermentation and went straight to bottle conditioning? Thanks!

BEST ANSWER: Secondary is not needed for a cloudy cider. Also, I do not believe the flavor changed much waiting in secondary for a couple weeks. If you bottle, try letting some age to see how the profile changes over time.
Does this ship at room temp. or refrigerated? How long will it last at home before I need to add it to the juice?

BEST ANSWER: Liquid yeast ships in an insulated envelope with an ice pack. We would recommend using them within 3 months of purchase.

BEST ANSWER: It will handle roughly 5-6 gallons. Add it to 4 gallons and you will get awesome results.
