BEST ANSWER: Thanks for contacting Northern Brewer. The Chocolate Malt is a barley that has been roasted to bring out flavors of roasted coffee and cocoa. They are roasted to obtain a measurable color of 350 degrees Lovibond which insuring uniform quality for beer making. Roasted Malts are not typically mashed, rather steeped to release their flavor characters. Cheers! -Deanna, staff
